Say Hello To Salads

One of my favorite things, right?!  Well, Yes!!  As much as I loved our trip to New Mexico, salads were not a big part of it.  Since our fridge wasn’t working properly while we were there, I couldn’t really stock up and have a bunch of veggies at hand.  I did make one big salad when we first got there, but after that, no fridge=no salad… 😦

I did get up and going on Thursday.  I got my hair cut early (photos to follow if they turn out decent) I got to Aldi for some groceries ( there was truly nothing in the fridge except mustard, ketchup, mayo and water bottles!) I then headed to the produce market and shopped with restraint.  Under the circumstances, I could have gone hog-wild, but I decided that I would keep my control.  It was difficult, because I was dazzled by all of the veggie goodness! 😉

When I got back, Ralph was ready for lunch.  I decided that since I would be facing weigh in at Weight Watchers today, I’d try to make a good choice.  Since Picasso’s is right around the corner from us, and I know they have things that are good choices, I suggested that.

I decided on their mixed cheese salad again.  I really can’t go wrong with this, it’s filling and very tasty with the balsamic vinaigrette added.  I love that they always give me extra.  Hello dinner salad!

I actually couldn’t wait to get to my dinner salad.  It had been So Long since I’d had one. 

I’m so out of practice, that I forgot to put the tomatoes in the photo!  But of course the romaine, celery, green bell pepper, shredded cheese and veggie burger made it!

Happiness is a Big Purple Bowl filled with veggies!!  I enjoyed this so much.  Ralph joked that if I said “mmmm” one more time he was leaving!!  It was very good and was just what I needed.  I think there will be many more of these in my future! 😉

I’m off to weigh in at WW in a little while.  I’m hoping I have an acceptable result.  I’m pretty sure I’ll have a gain, just hope I don’t have to pay!  We’ll see how it goes…Hope it’s worth not having my coffee this morning!

WIAW~In The Land Of Enchantment

Even if I’m confused about what day it is…and if you’ve been reading lately, you know that I am ever since we got to New Mexico…even with all of this…I Know it’s Wednesday and that means, What I Ate Wednesday!  That’s the wonderful food party instigated by Jenn at Peas & Crayons. Since I’ve only settled into New Mexico and now our California road trip is looming, I’m not doing too well with summer staples, but when we get back to NM at the beginning of the week…we’ll do some stapling! 😉

Finally got the chance to try some of the Barbara’s cereals, they carry them at the local food co-op.  I wanted puffins, but settled for shredded oats.  These are So good.  Very filling which I like.

Made a great salad the other night.  Romaine, some local grown lettuce, tomatoes, celery, red and green bell peppers and an apple. I had bought some Mrs. Dash, figured that would be a good all-purpose seasoning to have, some parmesan cheese and light ranch dressing.  It was very good.  Like my Big Green Bowl? Got it for $1 at Target.  Works great although, I do miss my Big Purple Bowls… 😦

Ralph and I went to the local Asian Buffet.  We’ve been there before and one of my favorite things is the fact that they have vegetarian hot and sour soup.  This is very spicy and yummy! 

I also had a nice plate full…

Veggie lo mein, veggie mei fun, egg foo young, mixed veggies and bok choy .  Very good and I was so stuffed, I couldn’t believe it!  I did have a nice plate of melon after but forgot to take a photo… 😦

So that’s about if for me for What I Ate Wednesday.  By the time you’re reading this, we’ll be on the road to California…at least we’d BETTER be!!

WIAW~Walking, Walking, Walking

Good Morning and welcome to the latest edition of What I Ate Wednesday!! Do I sound like a game show host?!  Not that I want to  but what the Heck!  Wednesday is the happiest day of the week around here. Why?  Because the delightful Jenn over at Peas & Crayons brings us all together each week for all of this fun!  Don’t forget to stroll over there and see all of the wonderful food and be sure to leave some comments!

Peas and Crayons

Yes, we’re still acting all fit!  For once, I don’t have to feel left out…as my title suggests…I’ve been walking and walking… I’ve walked 2 miles almost everyday over the past 2 weeks.  That’s not much for some people, but I’m just getting back into this.  In spite of the heat, I get out there early and give it my best!  I’m feeling really good about it and the days that I’ve had to miss for various reasons, there’s definitely something missing in my day.  I’m sticking with it!! 🙂

How about some food?  Ok by me!

Overnight oats with Spiru-tein tropical fruit flavor mixed in and a nectarine on top…So Good!

This salad looks a lot like my usual ones.  But I was finishing up some celery and it was SO crunchy that it took me over an hour to eat it!  I love a meal like that…the longer it takes me to eat it, the less likely I am to need a snack!

Over the weekend, Ralph and I went to Dunkin’ Donuts for breakfast.  Had my usual fav…iced coffee and the veggie and egg flatbread sandwich.  So good!

However, I have to confess….

I also had an apple fritter…I shouldn’t have but it was SO good!!  And yes…I counted the Points! 😉

Another salad in the lovely Big Purple Bowl!  This one had Morningstar Farms Veggie burger cooked up and added in.  Yummy!!

That’s about it for food photos this week…it’s not that I’m not eating…just not taking many photos.  Trust me, I’ll be overloading you with food photos when we’re on our trip which is less than 2 weeks away!!! I’m so excited!  I’m so behind!! We’ll see how well I stay on track then!!

The Boys and Me

Friday didn’t start out with Boys.  It was one of my lovely wake up at 3:3o days, so after about an hour of trying to go back to sleep I got up, made my coffee, worked on the computer and then read for a while.

I had an appointment with the “lady doctor” as Ralph likes to call it.  Had a good bit of waiting there because they’ve changed to a new system and the new system did them the favor of triple booking patients!  What fun.  It wasn’t so bad because I had my book with me, but it was Freezing in the waiting room!  I don’t know why offices insist on doing that, but I don’t feel like getting on my soapbox right now. 😉

I got home by 12:30 which wasn’t bad considering the issues at the doctor’s office.  Ralph’s son Bill and his sons were scheduled to come for a visit and to go for lunch.  They got here about 1:30 but only grandson Patrick came, Alex was camping.  We missed him but headed out any way.

We decided on Picasso’s for lunch…quick, easy, close, Very reasonable.  Why wouldn’t we choose it!

I had my usual favorite-the mixed cheese salad with balsamic vinaigrette.  As usual…Delicious!  I can’t get over how their prices are so much better than so many of the other pizza places in the area.  Their food is every bit as good And it’s 4 blocks from our house!

After lunch we decided to go down to the Park to walk around a bit, look at the river and the planes coming in to the Philadelphia Airport.  Well, that’s why I like to go anyway! 😉

It was a nice day but I was fading fast because of my 3:30am wake up.  Bill and Patrick had some errands to run so they were off soon after this. Actually there was a stop for ice cream in which I did not participate.  I was there, but I didn’t have any because…it’s Friday!

Not sure how my weigh in will go this morning.  I’m hoping I do well.  In spite of several meals out, I feel I’ve been very much on track and I have been doing my walking.  Didn’t get to do it Friday morning because of the doctor’s appointment.  I could really feel it throughout the day.  I was very stiff because I hadn’t walked.

Saturday Reprieve

I realize that I get a little manic some times.  I obsess about things, but I don’t really mean to. 

I was complaining yesterday regarding the fact that we made a dinner date with some friends for Friday night, which always strikes fear in my heart because I weigh in for Weight Watchers on Saturday morning.

We went to a restaurant known for its fish dishes which made it a little tricky for the old vegetarian.  Luckily, there was a decent salad option available.  But it’s a little frustrating how many times people (the waitress) can say to you, “You’re a vegetarian, you eat fish right?”  No, I’m a Vegetarian, I don’t eat Fish!

Luckily there was an appetizer I could eat.

Steamed edamame.  The dish was quite huge and I ate quite a few before my meal, but I made sure they didn’t take the leftovers when they cleared the appetizer plates.

I asked for an entrée sized house salad and this was very good.  It had hearts of palm which I hadn’t had in a very long time as well as a very tasty balsamic vinaigrette.  I shelled the remaining edamame and added them to the salad.  I have to admit that I ate 3 slices of bread which was some of the best bread I’ve had in a long time.  Overall, Yummy!

So the question still remains, How did I do at Weight Watchers? I was quite pleased when I stepped on the scale.  I lost a pound and a half!  I was pretty excited.  I like to think that my walking all week and my good food choices gave me this result rather than my craziness leading up to Friday night’s dinner.

Unfortunately, I didn’t get to do my walk Saturday morning.  It’s not good to exercise right before a weigh in.  I had the time, but I didn’t want to take the chance.  I had initially planned to do it later in the day, but the heat was dreadful, so I skipped it.  I did go to the local mall with sister Ele and our friend Jim.  We walked the entire mall top and bottom floors.  I feel that was a pretty good walk.

I’ll be up Sunday morning and out the door at my usual time in order to keep myself on track.

Hope everyone is enjoying their weekend and trying to survive the heat.  I know that for me, I’m melting and I can’t wait for this heat wave to be over.

The Productive Day (With Too Much Eating Out!)

Tuesday was a busy day as I mentioned it would be and a productive one as well.  I had my mammogram appointment at 12:15 (ouch…) and that went well.  We had to go to Ralph’s former department to get some reimbursements handled and ask a few pieces of info about our new insurance.  That was all handled well.  It sounds like I’m coming up on a big “BUT…”  I’m not everything went well.

After my appointment, we had some time to wait before we could head to the township building so we went for breakfast/lunch.

Had a Greek omelette with cottage cheese on the side.  This was not as good as others I’ve had but it was tasty.  Also not happy about the fact that they charged me $2.99 for a side of cottage cheese instead of home fries.  Other restaurants just make the switch for you.  Oh, well…

After our second appointment and a stop at the bank, we headed home.  However after doing a few things around the house, Ralph said he wanted to go out to eat!  I’m not that big a fan of eating out twice in one day.  First of all…it’s Expensive! Secondly, it tends to lead me off track.  I said Ok because I couldn’t handle the moping face.  You’ve seen the moping face, haven’t you?!

This was very tasty, but way more Points than I wanted to use.  Romaine lettuce, mandarin oranges, avocado, dried cranberries, red grapes, walnuts and gorgonzola cheese.  I picked a lime chipotle dressing which was very tasty, but I could tell it was high in points.  I did my dip the fork in the dressing and then in the salad trick.  That helps.  It was very good. 700 Points?  Sounds about right!!

I want to share with all of you a new blog.  It’s called moms-retreat. It’s written by three young Moms, one of whom I know very well, the other two are her friends. Sue was the best friend of my niece Mary who passed away.  Sue is a wonderful girl (still a girl to me) Mom to 5 beautiful children and wife of a (to use her words) “smokin’ hot husband.”  She’s been cracking me up with her Facebook posts and I’ve been suggesting she start a blog.  I don’t know if my nudging had anything to do with moms-retreat coming to reality, but I like to think that it did. Please take a look.  There’s a lot about life and love and young motherhood.  I think it’s worth the read.

Not sure what’s on tap for today.  Just trying to keep my head above water.

Question for the Universe: Why do some men insist that the hard way to do things is the way things should be done even when the easy way has been offered?  I was able to convince one of these men that the easy way was in fact the easy way.  I feel very fulfilled right now.  I’m so impressed with myself sometimes! 😉

WIAW~Parties and Real Life

I’d like to say…Ok…it’s What I Ate Wednesday!  Whether it’s a full week or a slow week, filled with parties or just real life, Wednesday means one thing, the fantastic party hostessed by Jenn at Peas & Crayons!  After feasting your eyes here…hop over there to drool and leave a few comments.  It is the best fun.

What I Ate Wednesday Sensible Snacking

Again, we’re supposed to be talking about sensible snacking.  I think I’m failing again although, I have been making overall good choices.  I think if I think too much about snacks, then I want them so here’s this week for me.

Favorite new snack…sunbutter on caramel corn rice cakes…Yum!  Filling, too.

My Sunday ice cream, much smaller this week for which I am proud of myself.  A small cup of coffee and butter almond…my two favorites!

This could be a lunch or snack…it was in that mid part of the day…pineapple Greek yogurt, Fiber One and a good book.  Great combo in my opinion!

It’s great when you make a Mega Salad for a party, then get to bring home the leftovers…

Add a Morningstar Farms tomato basil pizza burger to it and it couldn’t be better.  I now have bottled dressing to finish up before I start back to making my own again.  This is pretty good and only 1 gram of fat per serving.

The very last of the salad with sunflower seeds, pumpkin seeds and crock pot black-eyed peas added.

The Big Purple Bowl is getting a work out!  Shredded cheese added-Aldi has their 2% cheese available again, Hooray!  A combo mixture of light balsamic and lite catalina…Tangy and Tangy!

So that’s What I Ate Wednesday for this week.  Nothing really unique or out of the ordinary.  Still it feels like a pretty good week so far.  I’m still trying hard to stay on track for Weight Watchers.  I think after my good loss on Saturday, my momentum is up and running.  Too bad I’m not up and running!  😉
