Bunny Days

On Saturday, on my drive to my Weight Watchers meeting I saw 3 bunnies!  I couldn’t believe it.  They were all spied along the same street.  It’s a very winding street with speed bumps and I like to think the speed bumps were there to keep the bunnies safe.  It was funny that when I got to the meeting and told my friend Debbie about the sighting she said “Do you talk to them and shoo them away and tell them to stay out of the street and be careful?”  I confessed that I did.  Guess that makes the speed bump comment a little less embarrassing… 😉

I’ve been thinking lately how I missed oat bran for breakfast.  I had stocked up on it the last time I bought it because the store had been out of it on my previous visit so I have plenty.  Sunday was the day.  Decided I’d feed my need.

Nice before photo…there is no “after” photo.  The reason is, I guess I really haven’t had oat bran in a while and the oat bran disgraced itself all over my microwave.  😦

The really annoying part is that I lost so much of it.  When I finally got the chance to eat it…after cleanup…it was delicious and I’ve decided I really need to have it for breakfast more often. 

I decided to try for a less messy breakfast for Monday and put together overnight oats in a jar (OOIAJ).

Still trying to get the hang of the overnight oats thing.  I added 1/2 cup oats, 1/2 cup almond milk, 1/2 cup Greek yogurt, 2 tsps Chia seeds and about 1 Tbsp of honey.  We’ll see if I like it cold or if I need to microwave it as I’ve had to in the past.

Did a few chores around the house and then Ralph decided we should go to the mall to use a birthday gift card to Sears (which I had found during cleanup!)  He needed a new sports jacket and thought that would be a good use of it.

After malling, we decided we were hungry.  Ralph is flexible and I decided that if I spoke up and suggested somewhere that would let me make good choices, I could stay on track.  I’m really getting excited about staying on track lately…have you noticed?!? 😉

On the way home, we stopped at Picasso’s Pizza again.  They have one of the best Big Tossed salads for only $5.00.  They also have excellent balsamic vinaigrette as I’ve mentioned before.

I like it because they add sweet bell peppers to it, a nice twist you don’t get on many salads.  Adds a lot of flavor.

When we got home, I was really tired for some reason.  I decided to relax and read while I watched a Law & Order: SVU marathon.  What could be better?

Accompanied by a Tootsie Pop…Wild Mango Berry…one of my new favorites!

Snacking was tough last night.  Couldn’t get myself under control.  I had popcorn and then I wanted something sweet.  I remembered I had the makings (what makings) for one of my favorite snacks.  Graham crackers and apple butter.  As sweet snacks go, it’s not too bad and it’s something that I don’t usually over indulge.  I enjoyed it.  Probably should have just had another Tootsie Pop… 😦

Anyway, this morning we’re back to bunnies.  Since I didn’t get any photos of the Saturday ones, here’s a Monday bunny. When I saw him out the window, I was sure he would scurry off before I got outside with my camera.  Fortunately, he did not!

He sat patiently for me.

Looks like the same photo, but actually it’s not.  When I tried to get closer…off he went.  I need a better telephoto!  Sometime soon…maybe…

Off now to eat my overnight oats, exercise and then on to perfect my sorting and packing skills.

Back On Track and Raring To Go!

After what could be called a “challenging” food Weekend (no, ya’ Think?!?) my plan was to get back on track with my eating and with exercise. 

If there’s one thing I’ve learned from Weight Watchers, and something I always tried to tell my members when I was still a leader, Do Not let a challenging day or even a challenging week get the best of you!  The difficulty with that is, sometimes you can convince yourself that is the way to approach it and sometimes you can’t. 

I have to admit, I was really down after facing my gain on Saturday.  I had been doing so well over the last few weeks with small but steady losses.  That smacked me in the face.  I suppose that might have been what I needed!  I also admit that I was not as good as I could have been at the wedding and it seemed to carry over to Sunday.  😦  😦   😦

But I am back and I will get this under control!  I have to get both my mind and my body back into this. 

Monday morning I got dutifully on my exercise bike (as I always do…) and instead of my usual 30 minutes I did 45 minutes.  My housing arrangements are not as conducive to exercise as some other house may be or as my NM house will be.  This is where I do my exercise bike…

Cramped, right?! Messy, Right?!?  Yes to all.  I’ve never had a lot of room, that’s the way it is in a tiny house.  Now with the packing I’ve been doing and nowhere to put what’s been packed, it’s very…shall we say cozy.  But it does the trick!  The mile counter on my bike died several years ago, so I have no idea how many miles I’ve done but 30 minutes a day, 6 days a week (sometimes more) adds up.  Looking to the positive, I suppose I should give myself credit for that. 

 I’m going to try to keep up with the 45 minutes every morning.  I should probably try to add in some walking in preparation for the Relay For Life next week.  I need to figure out how to work that into the day.

I was on track for food yesterday too.  I had oatmeal with almond milk for breakfast.  I hadn’t had plain oatmeal for a while because I was concentrating on oat bran.  I’m almost out of oat bran and I have a lot of oatmeal so I went with that yesterday.  I enjoyed it!

Dinner was stir fry of the day!

Asparagus, yellow squash, zucchini (missing in action), veggie broth, Locatelli cheese and my wonderful crock pot black beans!

All served on leftover couscous.  It was really delicious and extremely filling.  So much so that I did NOT snack at all last night!  I’m really proud of myself for that.  I guess it helped that I fell asleep… 😉 but nonetheless, I didn’t snack!! 🙂

Today I’m going to do my best to add exercise in.  I wear my pedometer daily.  I wear it while I ride my bike.  I get conflicting views regarding the steps that the pedometer counts while riding on the bike.  I chose to count them.  I try throughout the day to march in place whenever I can.  When I’m cooking, I march.  While I’m doing the dishes, I march (ok, I splash sometimes, too 😉  )  It adds to my steps.  I try to do it while I’m watching TV in the evening.  Glee is on tonight and that’s a good one for marching.  The music is all peppy and gets me going.  That’s part of my plan. 

Hopefully, I’ll be going for produce today because I’m OUT OF FRUIT!! Oh, No!!  That will be a help too.

So I’m off to face the day.  This will be at my side all the way…

Yes, those are “steps” from riding the bike, but they’re mine and I’m keeping them.  I’ll update tomorrow how many I get in.

Just When You Think You’ve Got This Thing Down…

I guess I have to apologize to all of you, and thank my friend Valerie in Kansas City for making me realize that yesterday’s post made no sense! 

As I was posting I kept having a weird thing happen…as I got to the end of a sentence, and went on to type the next one, it would type OVER the previous sentence.  I couldn’t figure out what was happening and I just continued and re-typed things.  I don’t know what the problem was, but half of my post was lost.  I guess from now on I’ll have to save a draft before I publish to be sure I don’t lose anything. Hrrumpphh… 😦

For whatever reason, WordPress saved the photos but not the text.  Since I write as I type, I have no idea what I said.  I’ll be using it again and probably making basically the same thing, so stay tuned! 😉

Maybe I was censored because I made a comment about the death of Bin Laden.  I didn’t mention his name…I guess now my laptop will catch fire!! Anyway on that note,  God Bless our Troops and it’s a Great Day For America!

I did spend a lot of the day watching the TV coverage, trying to soak in everything and being in disbelief that I actually slept through it all and didn’t know anything until morning.

I started my day with Oat Bran.  I’m still not thrilled with the Hodgson Mill brand.

It’s too chewy and doesn’t have the smooth consistency I found in Mother’s brand or even the store brand variety.  I’ll eat it because it’s ok and I hate to waste things.  But I think from now on it’s store brand for me!

The day continued to be crazy…I spent some time at Gail’s then when Ele finished work I met her at the church to unload our cars of everything we’ve been collecting for the Rummage Sale on Saturday. We’ll be doing that for the next few days.

It’s amazing all of the things that are being donated.  We just need to get more customers now.  We could use more help on the project itself, but we’ll have to work on that.  The next sale is this coming Saturday, May 7.  Ele and I won’t be able to be there because we’ll be at a Wedding!!  Those details will be forthcoming!

Dinner needed to be quick and easy…my favorite kind!

Whole wheat pasta, canned diced tomatoes, garlic, Locatelli cheese and the last of my navy beans!

I cooked the pasta.  Meanwhile, I sautéed up the garlic then added the tomatoes and beans.  I added ground black pepper, dried basil and red pepper flakes.  Topped it all with the Cheese!!  Ta Da!!

It looks like an awful lot of cheese… it was 3 tablespoons, but that’s only 1 Point on Weight Watchers and I love it so…

It was very tasty and filling.  It kept me satisfied all night with no snacks.  What more can I ask? 😉

Not sure what today will hold.  I know I’ll be spending time at Gail’s and working at the church with Ele.  Time for some breakfast.  Since I haven’t been grocery shopping, I’m not sure what I have left…it will be an adventure!

Back to Reality

I had a wonderful time on Friday watching the Royal Wedding.  Every detail seemed to be perfect. 

I’m very happy for them, they seem like nice young people who have a much better chance at succeeding at this married while Royal thing than anyone else in recent memory.  I wish them the best!

While I was watching and while on my second cup of coffee, I decided I was hungry.  I decided on oat bran.  For some reason that seemed British to me.  I have no clue why, it just did! I have expounded on my new-found love of oat bran before.  I don’t expect it to change.  I did however have an interesting experience with it.  I had run out of the store brand I was using and decided to open up the Hodgson Mill oat bran I had previously purchased precisely because there was a recipe that sounded good on the box.

It was interesting.  The texture was different from what I’ve gotten used to.  It was less finely ground.  It tasted very good, but because of the difference in texture, I should have probably cooked it a bit longer. I was in too much of a hurry to get back to the wedding to actually take a photo of it.  I took the picture of the box later (blogger’s license? 😉  )

The day was long and tiring.  Dinner was VERY simple and without documentation.  I had Morningstar Farms Mushroom Lover’s Burgers on Pepperidge Farms Deli Flats 7-Grain.  These are the lowest in Points that I’ve found of any of the Deli Flats or sandwich rounds.  They only count for 2 Points each.  I was quite disappointed when the Point value of all of them went from 1 Point to 3 Points.  These are my go to variety now.  Our leader mentioned another brand that I have yet to find.  I’ll have to continue my search.

I really crashed last night which was good for the purpose of no snacking!

Which led me to another success at Weight Watchers this morning. I lost another half pound.  That puts me only 2 and 1/4 pounds from my personal goal at WW! 🙂  I can’t tell you how long since I’ve been there.  It’s within my reach and I am determined to make it.  Oh, yeah…that and fitting in some of the jeans that are getting dusty in my drawers while they don’t fit me.  I suppose I should at some point tell my other jeans and WW story.  I’ll save that for a slow news day and share it then. 😉

It was very chilly out this morning when I was leaving for WW.  I had a sweater on and thought that would be sufficient.  I had to run back in the house for a jacket.  It’s still pretty cool, but the sun is shining beautifully.  Ralph has said he wants to get out of the house, so we’ll see where it leads us!

Where Did Thursday Go?

I woke up Thursday not wanting to do any of the things I needed to do.  I didn’t feel like doing my meditation practice in the morning so I skipped it. (I did make it up in the evening though) I did my 30 minutes on the exercise bike. 

Then I was off to grocery shopping.  I wanted to make a recipe that Ele had made on Sunday and I needed to pick up a few things.  I stopped at work to see her to be sure I got what I needed.  When I came out of her office it was Snowing!  I couldn’t believe it.  Fortunately, it didn’t last long. I just stayed cold and damp all day.  (Remind me again why I’m still in New Jersey… 😦  )

At the store, I stocked up on Oat Bran which I had been missing terribly since I finished my supply earlier in the week.

…and since the box had a yummy looking muffin recipe on it, I splurged on a new muffin/cupcake tin!

I’m looking forward to giving the muffins a try…yes…she CAN cook from a recipe!  I’ll prove it to you! 😉

I had picked up some things for my friend Gail and stopped by to see how her Mom was doing.  I spent most of the afternoon there.

I hadn’t eaten any lunch and by the time I came home I was starving, but didn’t feel like cooking.  I decided it would be a salad for me.

I popped 2 Morningstar Farms Spicy Black Bean Burgers into the toaster oven.  That always seems to be the easiest way for me to cook them. 

While they cooked I chopped up Romaine and grape tomatoes

Added sunflower seeds and  1 cup of my home-made black beans ( I was going for serious protein here!)  I also added lots of Mrs. Dash’s Fiesta Lime seasoning (yum!) and tossed things around.

Added the chopped up burgers and WW cheddar cheese…can you say PROTEIN?!?!

Even though I had the Newman’s Own Light Lime in the photo, I changed my mind at the last minute.  I decided that plain balsamic vinegar would taste better with it.  I was right.  It was a truly delicious salad.  It was very filling and just what I needed.  I like when dinner is filling…it gives me a much better chance to stay on track as far as night-time snacking is concerned.

Interesting thing about the Newman’s Own.  After I had decided not to use it, I got a call from my friend, Pat.  She had bought the Light Lime on my recommendation.  She called to tell me that she had a bottle to give me because she HATED it!  I felt bad that she’d spent the money on it, then didn’t like it.

I guess it just proves the point that different people like different things.  I usually say I like anything with lime.  Two years ago I was in Florida with Gail and Alice.  We were out at a restaurant and I had been hearing about one of the beers, I think Miller Lite that now had a variety with lime.  I had been waiting to try it.  Gail looked at me like I was crazy when I ordered it while everyone else had their pitcher of Coor’s Lite.  I drank about half the bottle and asked for a glass from the pitcher.  Gail gave me her best “I told you so” look and then laughed at me.  I guess I can’t just think that anything with lime will be good.  Hey, it sounds like we’re getting back to the green theme again!!

Now it’s Friday.  It’s one of those days when woke up at 3am and couldn’t go back to sleep.  I’ve been using my time well though.  Let’s see if I can keep it up for the rest of the day!  Happy Friday!
