WIAW~Still Boxed In

I can’t believe that it’s already time for another What I Ate Wednesday!  This week has flown by and as you can see from my recent posts I’m in a bit of a whirlwind here.  The days have passed but I’ve been very productive so I’m happy with that.  I remain boxed in…meaning I’m still working among the boxes and general stuff around here.  The good news is, there are many fewer boxes than there were.  I would have accomplished more if I hadn’t had to clean up water from my leaking air conditioner, but more on that another time.

We’re here to talk about Food!  Thanks to Jenn at Peas & Crayons for as always being our gracious hostess for the Foodie Madness that is WIAW!  Be sure to visit there when you’re finished here.  There’s always something good to eat over there!

Peas and Crayons

Starting with breakfast…in fact this edition of WIAW is pretty breakfast-centric.  At least I’ve been eating breakfast, which I was ignoring for a while.


My recent and current favorite…bran flakes, Fiber One and soy milk.  This is delicious and keeps me satisfied for a long time.  Good thing in a breakfast!


A big salad in my Big Purple Bowl.  Black beans and couscous added to bulk it up.  I need to get back to making grains to add to my salads.  I always enjoy them that way.


Ok…so I didn’t really need to eat this.  French toast and scrambled eggs.  This was delicious and really too much for me to eat.  I did enjoy it and made the concession of having sugar-free syrup with it.  I don’t do this very often.

Another breakfast…


A little more appropriate.  I love ordering oatmeal out.  It just tastes better.  This was actually eaten because my stomach was kind of upset.  You see, I succumbed to pizza on Saturday night and suffered for it on Sunday morning.  Maybe the french toast was part of it too.  I should know better…I’ve been eating so healthy lately that things like pizza just don’t sit well.  I’ve learned my lesson!

Last but not least, back to a Big Purple Bowl salad again.


This time with home cooked pinto beans cooked in the crock pot.  Just love making beans this way.  So yummy.  I’ve even figured out how to reduce the amount of what I cook so I don’t run the risk of them going bad.  I hate to waste food…especially beans!  Also making an appearance here is a treasure found in the cupboard.  Clearing out is a good thing.  I found this great cup with a straw that I used to use when I was working.  Works great for my iced tea.  Less chance I’ll  knock it over and spill it…I’m a bit clumsy!

This post seems rather short this week, but in truth, I’ve got work to do.  As much as I love WIAW, I’ve got to get back to my projects.  I’m feeling so good about all that I’m accomplishing.  I’m going away in two weeks so I need to get as much done as possible.  Then when I’m away, it’s Ralph’s turn to work on projects!

WIAW~Food Between The Boxes

Silly title, I know, but I really feel that’s what’s been happening around here lately.  I sort and pack boxes and try to fit some food in between.  I suppose I should photograph some of my food ON the boxes…that would be fun.  But no, I don’t think so.

My meals are from all over the place this week.



One of my favorite breakfasts…egg substitute, egg whites and garlic chili sauce.  I like this so much that I had eaten half before I remembered to do a photo.  It’s way bigger than this to start.



Veggie burger on a salad…Yum!!  I actually had this twice this week…I know what I like.



Another favorite this week has been bran flakes and soy milk.  I’m trying to get breakfast in on a more regular basis and I really like this!



Fourth of July at Ele’s house!  I made the big salad and brought my own beans.  I had two bowls that looked just like this.  Love Ele’s deviled eggs…Yum!!



Ok…so there was Funfetti cake for dessert…so good!  Ele makes the best cakes!



Bran flakes and soy milk again…this time with banana! I’m happy that I’ve been doing better with breakfasts lately.



Tea for two at the Chinese restaurant…



Vegetable lo mein.  I haven’t had it in a long time and I really enjoyed it.



Ok…so there Had to be ice cream somewhere this week!  I had rum raisin and Ralph had black cherry.  So good.  We’ve got to make the most of it…they close in September!!



…and just to prove my point…one last breakfast.  Scrambled eggs and sliced tomatoes.  Always a winner.

WIAW~Surviving The Week

So many times the food that I eat and post would be forgotten if I didn’t take photos of it.  But what would be the fun of doing a What I Ate Wednesday post if I didn’t have photos?  Well I have done it without photos once when computer demons were wreaking havoc on me, but this week we’re good.

It was a tough week emotionally for me for various reasons, and I will confess that not Everything made it into a photo.  I’m also not proud of everything I ate, but as I like to say, it’s gone and it can’t hurt me anymore.  I am proud that I said “no” to an apple fritter at WaWa at Least 3 times.  Never did have one and that’s Ok by me.

What I Ate Wednesday: Love Your Veggies

This isn’t actually Love Your Veggies Month, but I like this logo and I sure have my share of veggies in this post!

After Ralph’s regular doctor’s visit we went to one of our favorite lunch spots.  I got my usual there, the Athenia Burger.


It’s the Greek salad with a substituted  veggie burger on the side.  This is so good.  They cook the veggie burger just right and the Greek salad is just enough.  Yum.

This is actually a different salad, this time with canned black beans.  They taste better home-made, but keeping some canned beans in the pantry is such a good idea.  Another thing I’ve been adding lately is a chopped up Gala apple.  So tasty.  I’m getting back on track though and there are some pintos cooking in the crock pot as I type this.  The BPB just loves to be part of  WIAW!

We haven’t gone to Subway in a while and Ralph suggested it one day last week and I said Yes!


Honey wheat bread, pepper jack cheese, spinach, tomatoes, onions, green peppers and black olives with chipotle southwest sauce.  Really tasty.

My reward on Saturday for all of my hard work on the yard sale…


My new favorite combo-black raspberry and peach.  This doesn’t look it, but I was controlling myself and got a small instead of a medium.  So good.

I guess that’s a good place to stop!  As I say, it was not the best food week, but I have no photographic proof so you can believe me or not.  I just like to be honest.  I’m feeling more in control now and  we’ll move on from there.  I’m sure everyone has a week like that now and then, I just haven’t had them lately and it’s a little scary when it happens.  I’m feeling a little closer to the top of my game.  I think the weather has something to do with it.  This rain is putting me in a terrible funk.  How do people live in a place like Seattle where it rains all the time?  Just makes me more determined to get to New Mexico SOON!!

Strange But (Ugly) Good~June 21

I know that Laura at Sprint 2 The Table started Strange But Good because, like me she likes to come up with unique and different food ideas.  In truth for my part, depending on who you talk to…I just eat strange things!  While preparing for this weeks Strange But Good, I had to wonder…how does Laura feel about down right UGLY food??  I suppose I’ll find out soon enough!   😉

Sprint 2 the Table

Those of you who read BCDC regularly or semi-regularly, know that I love to make beans in the crock pot.  I’ll whip up a batch in nothing flat (as long as I remember to soak them!!)  With my current refrigerator issues, I didn’t want to do an entire batch because I wasn’t sure they’d survive until I could finish them.

I experimented and made a smaller batch in my smaller crock pot (yes…I have crock pot Options!) I had bought a 2 pound bag of pinto beans at Aldi for, can you believe it…$1.79!  Amazing.  Pintos aren’t my favorite bean, but I like them well enough and they are as versatile as any bean (and in this case, cheap which is also good.)  I put a cup and a half in to soak the night before, rinsed in the morning, put in the crock pot and cooked on high for 3 hours.  Perfect! It made enough so that I could get several meals without being overwhelming.

Lunchtime came around on Wednesday and I was wondering what I’d have.  I had beans, for sure, also had cottage cheese.  Of course, there always seems to be a package of rice cakes living in one of my cabinets.



I mashed up a half cup of the pintos and mixed them with some Mrs. Dash Fiesta Lime seasoning.  It’s one of my favorites…very spicy/tangy.  I combined it with a quarter cup of low-fat cottage cheese.





Ok…it didn’t get any prettier with the close-up, combined with the fact that there was a huge thunderstorm going on when I was doing this which made the lighting very strange. I tried to pretty it up with some Mrs. Dash on top but that didn’t really help.  So, it’s Ugly but it was good.  The bonus is that I got 22 grams of protein and 30 % of my iron from this.  I recently started trying to be mindful about getting the iron I need and coincidentally (and fortunately) pinto beans are a good source of iron.

Sorry to get all technical on you, but I figured if I threw some positive numbers at you, you wouldn’t notice how UGLY this is!!!   🙂   But seriously, this was good and more importantly, extremely filling.  I will definitely be making this again.  Tastes good and good for me.

WIAW~This Is Only A Test

This is only a test.  No, we’re not going to talk about the good old days when we had air raid drills and hid under our desks at school.  That would go too far toward talking about how old I am.  This is What I Ate Wednesday, hostessed by the lovely Jenn at Peas & Crayons and best fun you’ll find for your money out here in Blog Land.

Here is where the test part comes in. In Monday’s post, I revealed that I’m using my new camera.  I love the results I’m starting to have when I take food photos.  Only thing is, I don’t always have it with me and some of my photos are on my point and shoot, some on my DSLR. I don’t quite feel cool enough to drag it out in a restaurant, Yet!  SO  the test part comes in because I’m not sure if I can figure out how to hook up both to download the photos.  They may be a bit orderless because of this.  But, Hey…I’ve done WIAW without any photos at all, so this has to be better…somehow.

Still don’t have much in the way of snacking, but again…hasn’t stopped me before!

I think this may work, If I don’t electrocute myself!



Cottage cheese, ground black pepper and sweet pickle relish combined on top of plain rice cakes.  One of my favorites.  Quick, easy and only 3 Points.



One of my traditionals…mixed cheese salad with balsamic vinegar from the local pizzeria.  So good, which is why I have it so often.



Breakfast out with my friends from Weight Watchers.  Egg white omelette with tomatoes, green peppers, onions and feta cheese. Sliced tomatoes on the side.  So good and a fun visit!



Side salad at lunch…It started out as Ralph’s but he didn’t want it so I took possession!



Veggie cheese steak…I have no words for how good this is!!



You know I couldn’t do a WIAW without some ice cream.  This was the very odd but incredibly delicious combo of black raspberry and key lime pie.  So Good!



Trying to be better about eating a Real breakfast.  This is egg substitute and egg whites combined with chili garlic sauce, cooked in the micro for 3 rounds of 1 minute.  Comes out perfectly.  A Gala apple for some crunch.  Very filling!



A big salad in my Big Purple Bowl makes me so happy.  Consisted of romaine, celery, green and red bell pepper, tomato, crock pot pinto beans, romano cheese and balsamic vinegar.  This was so good.  Should have added an apple, Probably will do that tonight!   😉



Yummy breakfast!  Gala apple with cinnamon, warmed in the micro for 2 minutes.  Topped with fat-free vanilla yogurt and that wonderful granola that I’m still working on!  This was really good and filling!

So as you see, I haven’t done a heck of a lot with snacking and I think it’s for the best.  Staying on track is good and snacking, even good choices sometimes lead me down the wrong path.

Strange But Good~May 17~Taco Soup

I love Strange But Good, the creation of Laura at Sprint 2 The Table.  It’s great fun and lets me get some of my stranger foods out of my system.  This one might not sound so strange, but for some people it might.  All I can tell you is that it is Delicious!

You may remember me talking about the fact that while in Florida we were attending a wonderful Weight Watchers meeting.  That leader has a Facebook page.  Someone from Florida posted this recipe and I found it and shared it with my friends Gail and Alice.

Well, before I had the chance to get the ingredients, they had both made the soup and told me how great it was!  Only problem with the recipe was that it was listed as counting for 2 Points on WW for a cup of the soup.  Alice recalculated it because none of us thought this was right.  It wasn’t and the recalculated count showed that it was 4 Points per cup.  Regardless, it’s delicious and packed with protein.


I had just made a crock pot full of black beans so I was set for them and didn’t have to use canned.


All of the other necessary ingredients lined up and ready to go.


Pot o’ Soup…cooking away. This is so quick and easy.  Almost the most time-consuming thing is opening the cans!


The finished product! This is so delicious and truly filling.  This was a 2 cup serving and in truth, I couldn’t finish it.  This on a night when I sat down to eat being Very hungry.  This is just a great, tasty and Cheap recipe.

Taco Soup – 4 pointsplus values per 1 cup serving

1 large onion, chopped

1 package of taco seasoning

2 cups whole kernel corn

1 can fat-free chicken broth (I of course, used veggie broth)

1 can black beans, undrained

1 can Great Northern Beans

1 can Fat Free Refried Beans

1 can Diced Tomatoes

1 can Spicy Seasoned Tomatoes, like

Tomatoes with Jalapenos

Saute the onion until soft in a large pot Sprayed with nonstick cooking spray

Add the other ingredients to pot and Simmer for 30 to 40 minutes.


Between Gail, Alice and I we all made it just a bit differently.  Alice made it with the tomatoes with jalapenos.  Gail made it with tomatoes with green chiles.  I made it with 2 cans of diced tomatoes because the spicy tomatoes I Thought I had were used for something else.  😦   I think it would have been tastier with one of the spicier tomato varieties, but it was just delicious the way I made it.   It is absolutely something I’ll try again. The great thing is that you can have everything in your pantry and with the addition of the one fresh ingredient (the onion) you can have a hearty and tasty meal ready in no time at all.  I hope you’ll all give it a try, then let me know what you think after you’ve tried it!

WIAW~This Is More Like It!

I know, I know…Last week I was lamenting how few food photos I had when I posted for What I Ate Wednesday.  This week, I’m trying to decide Which photos to use…seems like I have an over abundance.  Regardless, I will NOT miss a chance to be part of the Fabulous Food party created by Jenn at Peas & Crayons.  Be sure to check it out and leave some comments.  Just be careful of drooling all over your computer!

Let the Food Fun Begin!!



One of my old faithfuls and one of my favorites!  Caramel corn rice cakes with a quarter cup of low-fat cottage cheese split between them and liberally topped with cinnamon.  This is a great quick lunch for me when I’m working on my many projects around the house.



For our short road trip on Tuesday, Ralph and I stopped at a pizza shop that we love but only get to visit once in a while.  This is a hot veggie wrap. You have your choice of wraps, I chose the tomato (because I knew the color would be pretty!) It has broccoli, mushrooms, onions pepper and provolone cheese.  It is So good.  It comes with a pickle and chips.  I got the pickle, Ralph got the chips.  Yum!



Made a crock pot full of black beans…well, because I Love black beans and I’ll eat them all!



Nothing like a salad in my Big Purple Bowl that is filled with home cooked black beans.  So good.  Keeps me full for hours!  More Black Bean fun later in the week.


Look familiar?!  Yes, it’s my fave…spinach and mushroom omelette with sliced tomatoes.  Funny thing, here.  I’ve been getting egg white omelettes lately and forgot to ask for it this time.  It tasted so different with the full eggs.  I’m thinking I like the egg whites better!



An unexpected visit to one of our favorite diners for one of my favorite meals…the Athenia burger.  Greek salad along side of a yummy veggie burger.  Just love it!



Back at our usual diner, something I’d never tried before.  My friend, Gail had suggested it.  They call it a “veggie cheese steak.” It’s grilled veggies-mushrooms, onions, tomatoes, romaine lettuce and some other things I’m sure-all cooked together on a roll.  It comes with American cheese underneath, but I asked for Provolone.  It was Delicious!!  Expect to see this, again!!

Ralph and I took Ele out to dinner for Mother’s Day.  Back at the diner again…ok…we Like the diner!!



Salad first, with ranch dressing eaten with the dip method…dip your fork in the dressing, then pick up the veggies.  You don’t use nearly as much dressing but you still get the flavor.  An old Weight Watchers trick.



And THIS is what passes as a mini-meal at this diner.  Huge! I was proud of myself that I only ate half, but I must confess I had it later.  So very good.

Now here comes the real true confession part of this post…



Our favorite place in the world…Ice Cream Kids…is open for the season.  Since it was Mother’s Day, we thought we’d splurge.  This is a new flavor, to me at least…not sure if they’ve had it before.  Caramel Apple…I’m drooling thinking about it.  It was just wonderful. I’m proud of myself that I asked for a small and it was just enough (although in truth if I’d been left alone with a spoon and the tub of the ice cream…it would not exist anymore!!) A great treat to end the day.
