I’ve been fighting this dreaded bronchitis (was it always bronchitis or did it start just as a cold?) for way, Way too long.  I am starting to feel better but yesterday I had a coughing spell that even had Ralph worried.  I like to think that spell was all of the evil humors giving up the ghost and leaving my body. As I write this on Tuesday…I’m feeling pretty good, fingers crossed.

My WIAW posts seem to be very breakfast heavy lately, but hey…it is the most important meal of the day, right?!



I’ve been taking antibiotics for about a week.  I need to eat something before taking them.  I also have to be careful to try to counteract the bad effects of antibiotics so I thought that yogurt made the perfect choice.  The yogurt cultures add back in the Good bacteria that the antibiotics kill off along with the Bad ones.



For a change, I had cottage cheese with apple butter…with antibiotics.  If you’ve never tried the combo of cottage cheese and apple butter, you are missing something.  The sweet spiciness of the apple butter combined with the creaminess of the cottage cheese actually makes it taste decadent.  One of my favorites.

Saturday, Ralph decided we needed to eat Chinese.  I’d had a good day on the scale at Weight Watchers, so I said Ok.



Started with egg drop soup…yum…



My usual…Veggie Delite with brown rice.  This was also on the lunch special menu so it was a deal.  Delicious!

We had to run some errands on Monday and we agreed that breakfast at the diner would be a good idea.  I had never ordered an egg white omelette in a restaurant, but since the Point count for WW is lower, I figured I’d give it a try.



It had green peppers, tomatoes, onions, broccoli and asparagus.  Sliced tomatoes on the side.  This was really good.  I do have to check the Point value on this.  Egg whites in general count as 0 Points and it was filled with veggies, but I know they must have cooked it with something else, oil or butter so I’ve got some math to do. (Oh, Joy!)  Regardless, I know it was a good choice and I enjoyed it very much.

I realize I haven’t mentioned lately how I’ve been doing at WW since I came back to New Jersey.  Saturday I lost 1.6 pounds.  That puts me at 8 pounds below my WW goal and even 2 pounds under my personal goal.  Not sure if I can sustain this but I’m working hard to make good choices.  When I’m finally feeling good enough to go grocery shopping and start cooking again, I think I can keep myself on track.  At least I’m going to try!

    Oh no, bronchitis! You poor thing. Sending you many many prayers across the ocean. i sure hope it subsides soon, and your back to feeling 100% in no time 🙂

    • Thanks, Jessie! I’m feeling SO much better, but I don’t want to say it too loudly! 😉 Never had this before…never want it again. I don’t get sick so this has been a real pain in the neck. Have a great day!

  5. I have never tried cottage cheese and apple butter! Interesting combo. I am not a huge lover of cottage cheese… but am always open for new yummy snack options! Thanks for sharing.

  6. I was eating lunch while reading your post, Cauliflower Spanish Rice, and wondered if you’d ever tried it. It’s vegetarian, easy to make and really good. You can also spice it up, I used chipotle but I bet Siracha would be really good too. There are recipes for it all over the Internet. Worth a try for a filling low cal and low points I think, meal.

    I’m intrigued by your cottage cheese and apple butter. I love the omelette, although I would have kept the yolks because it’s where all the nutrional goodness is located. And, it happens to taste awesome. I’m glad you enjoyed it. 🙂

    Hey, you can NEVER go wrong with breakfast…to me, it is the ultimate in comfort/feel better food! That omelette looks great! I alway forget how much I love broccoli in mine! And yum, cottage cheese and really anything is good, but this reminds me I need to get some more PUMPKIN butter…love that combo! Glad to hear you’re feeling better! And great job on the progress!

  9. That salad looks good. I had an egg white omelet the other day, too … but I got hash browns and toast on the side … 17 WW PointsPlus later (for the omelet, half the potatoes and 1 slice of sourdough toast), I was full and happy, but next time I think I’ll go with the tomatoes.

    • Hi Arlene and thanks for stopping by! I learned a while ago that I didn’t need the hash browns. Greasy and if I’m going to eat potatoes…rather have a baked one! The tomatoes are a great choice. Another great choice is to ask for a side of cottage cheese. For me being a veggie, I’m always looking to boost my protein. Cottage cheese is a good choice and I just like it! They usually give you about a half cup and I’m sure it’s regular cottage cheese so I give it 3 Points. Well worth it! Please visit again!

  10. Haha. I love the appearance of your pill bottle in the first two pictures. I hope you get over your bronchitis soon! Being sick just plain stinks.

    That veggie delite looks delicious! I was always excited to see baby corn in my Chinese food 🙂

    And way to go on the weight loss! I’m confident that you can sustain it!

    • Hello, Ms. Cathy! Yes, I am. Last dose of antibiotic today. Adding in a bit of exercise. Going slowly, but I’ve got to get moving again. Are you going to do the A to Z Challenge in April?   14. Sorry to hear you’ve been under the weather–but man, still tasty eats! Love the idea of cottage cheese & apple butter…although now I’m kinda imagining cc and marmalade…only because I’ve randomly had marmalade on the mind today. Who knows why. Maybe because marmalade is delicious. As is cottage cheese.
