WIAW~Food For A Change!

I feel so good that it’s What I Ate Wednesday and I’m not trying to scramble (except the eggs) for food photos!  I’ve been more on track with cooking and making good choices even when we’re out.  Of course, What I Ate Wednesday is the brainchild of the lovely Jenn at Peas & Crayons.  It’s great fun and be sure to jump over there when you’re finished here to see what everyone is eating.  Get some good ideas and leave some comments.  That’s what I always do!    😉

I’ve got a lot of breakfasts in here as I look at my photos, but don’t the experts tell us it’s the most important meal of the day?  Well, today it sure is!

A Greek omelette that includes, onions, tomatoes, spinach and Feta cheese.  I ask for cottage cheese in place of potatoes and they outdid themselves this time!

White pizza with sliced tomatoes.  We’ve been doing this a little Too often lately.  Need to get this under control, but we usually do it on the weekend, then try to behave!

A homemade breakfast this time, one of my favorite egg sandwiches.  Tried to do some sriracha art…there must have been a clog, it made a mess so I covered it with grated cheese!

One of my favorite things, peanut butter on caramel rice cakes.  Forgot the cinnamon and didn’t realize until I was finished.     😦

This time I did NOT forget the cinnamon.  Vanilla fat-free Greek yogurt with sliced apples, all cinnamoned up.  Delicious and truly filling.  Can’t remember if this was breakfast or lunch.  Oh, well, it works for either!

One of my veggie combos-onions, garlic, zucchini, cabbage, frozen spinach (thawed), veggie broth and cottage cheese.  Various spices added and topped with Romano cheese all served over couscous.  So good and so big, I couldn’t finish it all!

One last breakfast.  Two scrambled eggs to be sure to get some protein to start the day along side of oatmeal with…cinnamon.  Cinnamon is good for our hearts, right?  I like the way it tastes!

That’s What I Ate Wednesday for this week for me.  I do feel that I’ve been eating mindfully and making good choices.  We’ll see what result I get at Weight Watchers on Saturday.

    • So excited for you, Cathy! But if you aren’t posting, how will I find out what’s happening on Aunti Wednesday? 😦 I was so shocked by that portion of cottage cheese. They usually give me about a half cup. I swear this was a full cup. Have a wonderful day!

  4. I love the eggs, especially that Greek omelette. Yummy, and you are right. Cinnamon is good for you and is a metabolism booster too.

  7. I’ve never thought to put cottage cheese into a veggie mix but it looks delicious. Do you cook the cottage cheese into it or add it after?

    • Hi Marie! I have things almost cooked, then with about 5 minutes to go, I mix in the cottage cheese, usually a half cup. Stir it around and let it melt in. Makes it all cheese-y without a lot of extra fat or calories. It’s great with pasta, too. Try it!

    • Hi Kaitlin! Eating mindfully is the only thing that works for me. If I stop being mindful, I get into all sorts of trouble. Even after 25 years on WW, I still have to be aware. That’s why the program works. Thanks for visiting, please stop by again!

  9. That pizza looks amazing. Plus, the apples and cinnamon combo was a new discovery for me last fall. So amazingly good!

    • Katy, this pizza is So good. You should try cooking apples in the crock pot. Peel and chop however many apples you like. Add just a touch of water, maybe two teaspoons. Sprinkle very liberally with cinnamon or apple pie spice or whatever combo of spices you like. Let it cook several hours until it is soft and wonderful. Makes the house smell so good and so tasty. For me this counts for 0 Points on Weight Watchers. I add about a third cup of fat free vanilla yogurt for 1 Point. I can have a huge bowl of it and it tastes like I’m cheating!

  11. Pizza is such a great weekend tradition – and yours looks great! I NEVER thought about putting nut butter (well, for me it’d be sunflower seed butter!) on caramel rice cakes. That is an incredible idea!

    • Hi Liv! I love it with sunflower butter too, but that’s hard to find around here (or it costs $7 a jar when I can find it!) so I sort of hoard it for a special occasion. Try it with a bit of cinnamon sprinkled on it…So Good! Thanks for visiting!

    • Cinnamon is the best. I put it in coffee. Sprinkle it (liberally if you like) over the grounds in your filter. Be sure to stir it in, otherwise it forms a barrier and it might over flow (I say that from experience 😦 ) It’s really good. Long story, but we refer to it as “beach coffee.” Thanks for visiting!

  14. That Greek omelette looks amazing! I imagine it could serve as a breakfast, lunch or dinner.
    I’m a huge cinnamon fan too. I love adding it to my morning oatmeal and apple milkshake smoothies.
