WIAW~Mindfulness Is Working

While I was sick, I didn’t have a lot of food photos to share on What I Ate Wednesday, so I started saving them up and only posting food on WIAW.  I think I’m liking that idea and may continue with it.  It’ll depend on the week and what’s going on.  A work in progress as my life always seems to be!

My current favorite go-to lunch…cottage cheese on rice cakes topped with Mrs. Dash-Fiesta Lime. For me on Weight Watchers…4 Points!  Love it!

Oatmeal at a new diner that opened locally.  Not sure about it.  I’ll have to eat there again and try something more substantial to be able to judge it.  Oatmeal was good.

Another trip to Taco Bell…this time black bean burritos! I’m so happy these were added to their menu…Excellent!

True confessions…I ate pizza on Sunday…I survived!

Ok…seriously…this was one of the tastiest things I’ve ever come up with…not to pat myself on the back.  There’s fresh cooked quinoa under there.  I sautéed onions, garlic and Aldi’s Mrs Dash substitute in veggie broth, then added crock pot black beans and frozen edamame.  Topped it all with some Locatelli cheese.  This was so delicious…I think I’ll make it again while I still have all the ingredients!  So Good.

To go along with the title today, I am feeling very successful with my efforts at being mindful with my food.  I’ve tracked everything and I’m staying within my Weight Watchers Points very successfully…even with the pizza.  I am focused on staying on track throughout these Holidays and so far, I’ve lost weight each week.  I’m charging along to get back to my personal weight goal.  If there is no huge monkey wrench that gets thrown into my plan…I might celebrate the New Year at MY Goal!!  It could happen!

    • No monkey here!! Have you seen the commercial for the show Sin City? The scary lady who Ralph insists looks like a Klingon and I agree, says…”If I want a monkey, I get a monkey…” Then they show her riding on a Sequay with a MONKEY!! Creepy!

    this is a little funny, but as soon as i saw your oatmeal comment, i thought of the phrase “you can’t judge a book by its cover” – translationg, “we can’t judge a restaurant by its oatmeal.” 🙂 hope you get back soon!

    • That’s true, Cathy. There was a restaurant that we used to go to every week after WW. Breakfasts were really good and “reasonable.” Howerver one day I made the misguided choice of oatmeal. When it came out, the spoon was already in it. I picked up the spoon and the entire bowl of oatmeal came with it. Needless to say, I never ordered oatmeal there again1! 😉

  4. Your crockpot bowl of veggies sounds so good. As a veggie-a-holic, I of course gravitate towards a big bowl of them. I love the burritoes at Chipolte, although lately I’ve been doing the bowls instead, and of course stuffing it all with fajita veggies. Happy WIAW Fran. Hope you have a great day.

  5. It’s nice when you come up with a great little combo of veggies that you like eh? I do the bean/veggie combo an awful lot myself! And Taco Bell has black bean burritos eh? Who knew?!

    • Hi Amanda! Thanks for stopping by! I just love my veggie combos, they fill be up and keep me satisfied and pretty much away from too much snacking at night! Yes, Taco Bell has black bean burritos and they’re very tasty! Please visit again!

  6. That veggie and quinoa combo looks great. Love the addition of edamame for extra protein!

    Hmm… That bowl of oatmeal from the new restaurant does not look as good as your usual one. Not quite as voluminous? So, do you have a certain food that a restaurant must always “pass” on to mark it off as a success? For me, it would have to be their steamed veggies. There is such a thing as way over-cooked, and way under-cooked, and I like neither! 😀 For my brother, it would be macaroni and cheese. If a restaurant can’t get that right, there’s no chance of going back 🙂

    • Hi Madison! I could vote for your choice And your brother’s! Love mac n’ cheese. I need to make my sister’s recipe and post it. It’s so good. I’m thinking oatmeal would be the one that has to taste good at a restaurant. It can be pretty bad sometimes. You’re right, my usual is better. My friends and I have decided that we’ll be going back there next week! Happy WIAW!!

  7. I definitely need to jump on the rice cake bandwagon- they look so easy and amazing! Happy WIAW Fran!

    • The are really useful, especially for me on WW. 1 point and I can top them with various things. I love the caramel corn kind with peanut butter but that really boosts the Points. 1 rice cake with 1/4 cup of cottage cheese is only 2 Points total. Yum!

  8. I took a cue from you and topped a salad with cottage cheese–something about lettuce & cc is a good combo! I apparently need to try it in stew, too 🙂 And if being mindful and eating right leads to all these meals? Well, they all look great!

    • Thanks, Allie! I just love cottage cheese…so versatile. Excellent is salads. I’ve been dreaming of salads lately but haven’t felt like making one. We’re going to a Christmas lunch for Ralph’s family today and that’s what I’m having!! Can’t wait!
