WIAW~Recovery and Post Election

As I write this post, I’m still not feeling very well because of this nasty cold and I don’t have any idea who won the election…however, I do know one thing.  As with all of the many Wednesdays in recent memory…it’s What I Ate Wednesday!  That’s the food fun fest thought up by Jenn at Peas & Crayons.  Be sure to take a moment to nose around over there and see what all the really creative people are cooking up.

A wonderful veggie combo from over the weekend.  Couscous on the bottom.  Topped by a mix of garlic, onion, zucchini, yellow squash cabbage and red beans.  Various spices mixed in and topped with parmesan cheese.  This was so good, but so big that I only ate about half and saved the rest for another dinner.

One of the reasons I like cooking up a batch of my crock pot apples.  Even if I’m not feeling well, I can have a good breakfast ready in no time.  Apples topped with plain yogurt and Fiber one.  Very tasty.

Knowing that I wasn’t feeling too well, I made a crock pot full of veggie soup.  Filled two huge containers that will keep me fed even if I don’t feel like cooking.  Thank goodness for microwaves.  Sprinkle some cheese on top and this will be dinner!!

Look what I got in the mail this weekend…

I LOVE when Dunkin’ Donuts sends these out!  A medium iced coffee every Monday from now until December 10!!  Do you think I was there?

You bet I was!  I don’t care if it’s cold outside…If it’s Dunkin’ Donuts and it’s free…I’m There!!

Ralph and I vote in two different towns.  I vote in the town where we live, but Ralph has never changed his voter registration from where his house is.  His son lives there, and since he’s still a homeowner there, he votes there.  After we both voted and stopped by to see his son, we decided that exercising our right to vote had made us hungry.

This was an incredible veggie burger.  Presentation is everything and this looked beautiful.  The good thing is that it was also delicious.  I have to say this may have been the best veggie burger I’ve found anywhere.  It was topped with mushrooms, roasted red peppers and pesto.  The roll was very unique.  Overall a great lunch.  I need to have this again!

    • Thanks, Cathy! I like the idea of classic/contemporary for 2013. I am ashamed at how many classics I’ve never read. Even if I don’t love them…I should read them. Yes, now we can get back to normal without the election hub-bub…Have a great day!!

  4. How do you get all these fabulous DD coupons? I signed up for their mailing list, but haven’t gotten anything yet–and I finally get (fairly) regular DD due to all my trips to ATL! (No, I promise that’s not the only reason I’m training in ATL. Or at least not ALL of the reason I’m training there ;D )

    • Shannon, I always keep track of what you’re doing and I appreciate your honesty regarding your struggle. As someone who has always struggled with weight issues, I really think the two situations are two sides of a coin. There is much we can learn from those fighting the battle from the other side.

    • Theresa, thanks for stopping by. These coupons come out periodically and believe me…I jump on them! I don’t care HOW cold it is…I’m drinking Iced Coffee!! The veggie burger was SO Good! Please visit again!

  10. Hope you feel better soon. Glenn and I vote by mail, we’re so lazy. Not as exciting as voting in person but since I am Republican I get outvoted every year by all my fellow Californians. Won’t stop me from voting though of course. There’s more than just a Prez to vote for after all.

  12. Awesome veggie burger! You are lucky to find a good one. I have tried many and they generally can’t get it right. Often they are wayyy to dry.

  13. Happy WIAW! Your veggie burger sure looks tasty. I will have to try crock pot apples sometime, they look good! 🙂

    • Hey, Jennifer, it was very tasty. The apples are so easy…Peel and chop them, I sprinkle Splenda and a combo of cinammon, apple pie spice, and pumpkin pie spice depending on my mood. Mix it all around and let it cook. It takes a while depending on how hot your crock pot gets and how many apples you’re using. I like them a little softer so I let mine cook about 6 hours. You could stop it earlier and they would be a little firmer. Either way…delicious, cheap and easy!! Let me know how it works for you!

    Thank goodness the election is over! If I had to hear “This message is approved by Barack Obama” one for time I seriously would have screamed.

    That veggie combo at the top looks delicious! And huge… Good thing that you didn’t try to eat it all in one sitting 🙂

    Crock-pot apples sound good. I made some apple butter over the weekend. Perfect fall food!

    • Hi Alley! I’m also glad the election is over. I’ve had enough! I love my veggie combos. I make them big because I’m really a volume eater and if I fill myself up with the good stuff, less chance I’ll go searching for things that get me into trouble. The crock pot apples are the best and so inexpensive. Plus the count for zero Points for me on WW!!
