WIAW~Greens Are Where You Find Them

Ok, I’m the kind of girl who likes to take her fun where she can get it.  One of the things that gives me the most fun, most weeks is What I Ate Wednesday.  In case you don’t know, that is the Fun Food Fantasy dreamed up by Jenn over at Peas & Crayons!!  It is the most fun you’ll have for Free!  After you wear yourself out having fun here at BCDC, head on over to P & C to nose around, get some ideas, and please Please, leave some comments.  So Let’s Play!

Peas and Crayons

The Theme is Green for the month of March.  Makes sense to me!  However, being a vegetarian, there is almost always green, every month!  I don’t feel I have much to show you in the way of food this week.  Silly person, that’s not going to keep me from playing!

My new perpetual favorite is egg salad.  Fancied up with celery and light mayo.  Served on chopped Romaine along side of low-fat cottage cheese, it is a tasty filling lunch.  Topped of course with lots and lots of freshly ground black pepper.

Dinner has a lot of green to show you.

Broccoli, zucchini, yellow squash and plum tomato along with garlic and veggie broth.  Forgot I had spinach in the fridge which got added after the photo-op!

Topped with shredded jack cheeses and sriracha sauce.

It was really good.  It could have benefited from some more protein, but I made do with what I had.   I’ve got some black beans crocking away at the moment to add protein for the next few days…Love my crock pot beans!

A non-green lunch…

I’m really enjoying this store brand of yogurt.  I love a deal, especially when it tastes as good as the name brands.  Still enjoying the book too!

More greens…Romaine, celery accompanied by red bell pepper, plum tomato, shredded cheese and Morningstar Farms spicy black bean burgers.  My favorite!

Big Old Wonderful salad in my Big Purple Bowl! Used up the last of the bottled dressing I have.  I’m going to try to make all of my own dressings from now on.  Fresher ingredients and I can spice them up the way I like them.  We’ll see how the experiment goes!

  1. I have to keep an eye on my protein, too, but us vegetarians have no problem getting in our greens!! 🙂

  2. You really did go green this month! I’m not the best as eating enough veggies. If I don’t plan properly, I end up eating breakfast for every meal. Lots of fruit, not a lot of veggies. I do try to have at least a spinach smoothie every day, though.

  3. I agree with Liz, it’s pretty easy to get in a lot of greens with a veg diet! Love your salad!

  5. That egg salad with a side of cottage cheese… yum! My green addiction right now is roasted broccoli. but that’s probably because I am getting a bunch in my CSA box. 😉

    • Hi Christine! Thanks for stopping by! I love roasted broccoli, and all roasted veggies. I don’t get to do it very often because I have a very small kitchen with very little storage…my oven become storage. I really need to re work things so I can roast things more often. Please visit again!

  6. Wow your salads look delicious. I run out of inspiration with salads pretty quickly… So its good to get some inspiration 🙂

  7. Easiest “salad dressing” ever….. Hummus plus lemon juice to thin until pourable. Or plain greek yogurt w basalmic vinegar and fresh herbs, salt and pepper. Both keep two days or so i the fridge too
