WIAW~Getting Into Green

So it’s that happy time of week, when all the really fun food kids hang out first at Broken Cookies Don’t Count and then sprint over to Peas & Crayons to celebrate What I Ate Wednesday hostessed by the lovely Jenn!  It’s great fun, be sure to make your way over there to look around, make your stomach growl and leave some comments!

For the month of March, what is happening at WIAW?!

Peas and Crayons

That’s right, we’re going green!  Now for me, as a vegetarian, that’s nothing new.  There always seems to be something green in what I eat, except for breakfast and truthfully, I’m trying to psyche myself up to make a green smoothie.  Haven’t done it yet, but maybe next week! 😉

My first offering certainly had green in it.  Whole wheat pasta, onion, garlic, zucchini and frozen asparagus.

It looks so pretty and boy is there steam coming off!

Topped with parmesan cheese.  I don’t like to pat myself on the back, but this was easily one of the tastiest dishes I’ve made in a long while.  I also added some sriracha sauce after the photo.  This kept me full for the rest of the evening.  No snacking except for a Tootsie Pop!

I couldn’t resist sharing this photo.  No I didn’t transport myself to San Francisico…it was just so hot, it steamed up my camera lens!!  I thought it was pretty funny!

Non green, but fruity lunch.

Pink Lady apples with more cinnamon than I had intended.

Shoprite brand Greek yogurt.  This is much less expensive than Chobani and very tasty.  I just wish they had more flavors that I like.  Yogurt companies always seem to offer strawberry and blueberry which I don’t like.  This was good though as was the honey version.  I stocked yesterday!

And then came the salad.  I made a big one for Ralph topped with tuna the way he likes it.  For me…

The beginning…celery, Romaine, plum tomatoes, red bell pepper and shredded cheese.  I neglected to include the last of my crock pot black beans which I also added.

Topped with balsamic vinaigrette.  This was a killer salad.  I actually had a hard time finishing this one.  Funny, the addition of the celery adds crunch and when I have to chew more, I feel fuller.  I need to remember that!

  1. Chobani is so good, but it’s nice other brands are getting on the bandwagon, especially with competitive prices.

  4. Your pasta looks amazing! Yummm! I add spinach to my smoothies and I promise I don’t even taste it. It’s such a nice way to get a little extra nutrition in. Happy WIAW!

  6. Great job on getting the greens in! You certainly fit your eats into the theme quite well 🙂 Try a green smoothie… but use banana as a base or lots of other types of fruit, otherwise you taste the spinach! In my opinion at least.. some people claim you can never taste it

  7. That pasta looks delicious! I have greens in nearly all my lunches and dinners. I sometimes have green smoothies, but often I have berries in them too, so they turn out a brown-ish colour!

  8. Mmm, you can never have too much cinnamon on an apple! And green smoothies are delicious–you should definitely give one a go. Although I have to admit, it’s not “solid” enough for me to eat as breakfast–makes a much better morning snack for me.

  10. i find most of the yoghurts hear are peach, peach & mango, apricot & mango… flavours which I don’t like. I actually prefer strawberry and blueberry!
