It’s Wednesday…It’s the middle of the week…It’s What I Ate Wednesday! That wonderful food free for all thought up by Jenn over at Peas & Crayons, of course! Jenn’s idea for the month is Eat Your Veggies. Well here I am, the local Vegetarian in Residence and I don’t really have much vegginess to share, second week in a row. It’s the strangest thing. I haven’t had the chance to go shopping except for a quick trip to the produce market which should have taken care of my issues, but it was…quick…I didn’t get much and I haven’t really been cooking much, not even my usuals!
But don’t think I’ll leave you veggiless. Tuesday on Valentine’s Day after a visit to the family doctor for a check up, Ralph and I went out to eat to celebrate the day.
We found ourselves at The Meadows Diner.
What did I chose? One of my favorites. The Athenia Burger.
It’s Greek salad, accompanied by a veggie burger. It’s my favorite thing to get here. Very tasty and very satisfying.
Various projects around the house left me tired. When I got to thinking about dinner, as so often happens I wanted quick and easy.
Lucky for me, I had leftover salad from our dinner at my sister Ele’s house on Sunday. Just enough for a Big Purple Bowl full. I heated up some MorningStar Farms spicy black bean burgers and some cheese from I don’t know when! I chopped up the burgers and the cheese and mixed them into the salad along with lots of ground black pepper, basil and light balsamic vinaigrette.
Absolutely the best and so amazingly filling, I was Not looking for any snacks after this, you can be sure!
So that’s my short and sweet What I Ate Wednesday. I do need to get myself charged up for a more enthusiastic and veggiful post for next week’s WIAW.

That does look filling but for some reason I am always looking for a snack after any meal. It’s like the meal isn’t really over unless I have at least a few bites of something sweet.
That was a very filling salad, Marie. That’s why I make them so big, I Know I’m a volume eater!
I feel so connected to you at this moment, not only because Greek salad is my go-to diner food of choice, but also (mostly) because I thought I was strange for crumbling up my Morningstar burgers on giant bowls of veggies! Hooray for common bonds through food quirks. 🙂
I’m with you all the way, Sarah!! It’s amazing how different the Greek salads can be from place to place. In Florida, they put potato salad in it! We have a hard time finding some of the varieties of the MorningStar burgers. The spicy black bean are my favorite, and fortunately I can usually find them!

I love re-creating restaurant meals at home. That’s actually where I get a lot of meal ideas.

Ooh yum – that Athenia burger looks awesome! I’ll have to remember this for grilling season! I like going out to eat – not only because then I don’t have to cook/clean 😉 but also because I get some great new ideas for when I am in the kitchen!

Hi Sarah! Salads are my favorite things especially huge ones. They fill me up and keep me under control. I love the burgers. I keep saying I’m going to make my own, but I don’t get to it.
The Greek salad looks pretty amazing. It certainly is an improvement over my sad little dinner of an egg with ketchup.
Poor, Ameena… If it makes you happy, it’s not a sad dinner. Simple is good. I had popcorn for dinner last night!
