What I Ate Wednesday~Ole` Edition

I didn’t intend for this to be the theme of What I Ate Wednesday, but here goes!  Oh, what is What I Ate Wednesday?  It’s the wonderful show and tell party that goes on every week at Peas & Crayons hostessed by the lovely Jenn!  Please be sure to pay P&C a visit, see the yummy food offerings and leave a few comments.

Tuesday morning started out with a toasted wheat English muffin which I forgot to photograph! And this wonderful orange…

Our major plan for today was to go somewhere that we all love…Tijuana Flats.

And why do we go there?  Taco Tuesdaze!  The tacos here are just delicious and you can get them lightened up with light sour cram and cheese.

Boy are they good!!

As I said, this wasn’t planned but for dinner, we decided on taco salads.  Gail had found these taco baking tins at a thrift store.

You just fit the tortillas into the tin and we baked them at 350 degrees for about 10 minutes.

Another thrift store treasure is this adorable dish that we used for salsas and sour cream.

Build a taco salad!  I can’t tell you how good these were.  Filling and delicious and because the shells are baked rather that fried, much lower in points than they might have been.

Dessert was simple and delicious…

Strawberries, cantaloupe, vanilla yogurt and lime Jello.  Very tasty.

Between lunch and dinner we went to the movies.  We saw A Joyful Noise.

It was a terrific movie, very uplifting and enjoyable.  I loved it.

  1. Those taco tins are cool. I have, of course, seen the finished tortilla products that come out of them, but I’d never seen the mold before. Now I feel like, “Well, duh….how else would they be made?”

  2. I love english muffins but never buy them because they are messy (with all the cornmeal on the bottom) my kids get crumbs everywhere. Bagels are much more floor friendly.

    Mexican food is my favorite and obviously you love it too. What pretty taco shells. Eating pretty food is always more fun.

    Taco Baking Tins??? Be still my heart! Those look great! Some thrift store finds really are amazing!!! Guess it’s true that one person’s trash is another person’s treasure. Enjoy your Wed.

  7. i cannot BELIEVE someone thought to create those baking dishes for tortillas. what a great idea. i should tell my mom. she used to love taco bell’s taco salad. 🙂
