I feel like I should be singing the old Willie Nelson song…”On The Road Again” because that’s what I’m doing right now. But it’s Wednesday and that means…all together now…What I Ate Wednesday!! Of course as always it’s hostessed by the lovely Jenn at Peas & Crayons. Be sure to hop on over to P & C to look around, leave a few comments and wish that your computer had smell-0-vision! So here we go!
This is actually a little tricky because I truly am on the road as you read this. I’m going to show you what I should be eating somewhere along the road.
My main course will be sandwich rounds with roasted red pepper hummus. I have some plum tomatoes and will probably add them for a little extra flavor.
I have a collection of Larabars to snack on as we go.
I LOVE almonds and they are a good healthy snack and give me a good protein punch. I’ve divided them out. Each bag is 5 Points on Weight Watchers, but I think it’s worth it.
I also packed 2 apples. Gee, if I had one more, maybe I could teach myself to juggle to pass the time on the road!! 😉
As I write this, I keep thinking of other things I could take for snacking. We’re trying to be thrifty and healthy while on the road. That’s what I’m trying to do with these choices. Too bad we don’t have a microwave in the van…we could make popcorn!!
