On Track And Trying To Stay There

In analyzing my eating plan over the last month or so, I’ve determined that part of my issue might be that I don’t eat 3 meals a day.  I know that’s what I should be doing.  Through Weight Watchers, I’ve known it for years.  Do I always do it?  Of course not.  I am going to try to do that on a more regular basis.  I can’t say that it will work every day, but Wednesday it did.

I started my day with the wonderful steel-cut oats I had prepared in the crocke-ette on Tuesday.

I microwaved the oats and the pear/apple mixture separately.  Much prettier this time!  So delicious too!  I will be doing this again, for sure!

On one of Ralph’s convenience store trips on Tuesday, he had bought me another prepared salad.

Simple, basic salad.  I always view one of these as a challenge.  What can I do to improve it?

Put it in a new container to start with.  With some low-fat cottage cheese to add protein and some spices~ground black pepper, dried basil and some Mrs. Dash Fiesta Lime seasoning (I love that!) Mix it all together…

When you mix in the cottage cheese, you don’t even need a dressing.  Saving on Points for sure!  Very filling.

Dinner started as so many others with a great veggie combo…eggplant, yellow squash, spinach, black beans, garlic, veggie broth and shredded cheese.  I also added a few Roma tomatoes after the photo.  Gotta use this stuff up before I go away!

Added dried basil and parsley to the mix.

The ever popular sriracha sauce adds some zip!  My bottle is almost empty.  I’ll have to replenish it after I get back from Florida!  This was really good!!

Since it was dark when I got up and got started here, I didn’t look outside.  As the sun came up I realized that something had changed over night…

It snowed last night!  How interesting. As cold as it has been for the last 2 days, it certainly felt like it could snow.  As I went outside to take this photo, it does seem warmer out which is a plus.  Hopefully we don’t get anymore.  Sadly, Ralph and I have a funeral to attend today.  I hate to be travelling in snowy conditions.  Hopefully the weather will cooperate.

  1. When I saw the snow on the news I was so glad that you didn’t have that long commute any longer. I knew that by the time you had to go out things would be better.

    I also love your baby crockpot! How sweet is that!

  2. So are you saying you eat more than 3 meals or less. I eat 3 meals with 2 or 3 snacks thrown in. I can’t imagine going through my whole life constantly not eating even though I am hungry so the snacks are staying!

  3. I agree with Maria, I wouldn’t feel bad if your eating more than 3 meals a day, I usually eat at least 5 or 6 times a day but I guess it depends on what works for you 🙂

  4. I’ve never tried cottage cheese on a salad, but I like to do salsa sometimes. Anything to avoid evil salad dressing! haha

  5. yum!!! i will have to try cottage cheese. i love the idea of creamy toppings, instead of regular dressings.
