Produce Is My Friend…

…No matter where it comes from.  On Friday, Ralph and I were running around doing errands late in the day. We were both tired.  No idea what to eat.  I didn’t want a lot because I was going to Weight Watchers the next morning.  We stopped at WaWa, he got a sandwich and I got a WaWa pre made salad.

This is how it started…

Added to it spinach, home cooked black beans and shredded cheese.

Very tasty and Quick!  But I had to do this because I was out of produce!!

Bright and early Monday morning, I headed to the produce market.  Boy did I stock up.

I was taking a chance getting all of this produce considering I’ll be leaving for 2 weeks in Florida next week and I know Ralph won’t be eating any of this but here is my haul!  Zucchini, yellow squash, Romaine, Roma tomatoes, Brussel sprouts, bell peppers, eggplant and Clementines.

Monday nights salad looks a lot like so many others, but hey, it’s what works.  I tried something new with my dressing last night and it is definitely a keeper.  3 tsp of olive oil, 2 tsp of balsamic vinegar, 2 tsp honey and 2 tsp of Dijon mustard.  Again a little water added to increase the volume.  So tasty.

This dressing really added some zing to the salad.  I’m going to try to come up with some others.  Since I eat so many salads, I need some variety! 

I snacked after dinner on some of the Clementines.

Honestly most of the Clementines I’ve had this year are not up to par.  These are delicious.  Juicy and sweet and easy to peel.  I don’t think I’ll have Any trouble finishing these before I leave town!

Nothing new in 2012…I still love my sunrises and sunsets.  I like to share them and hope you enjoy them.

  2. So many veggies! Veggies make me happy–yum yum! And I responded to a couple of your comments on my site, but wanted to make sure the flatbread response didn’t get lost! When I do chickpea flatbread, I use garbanzo flour–Bob’s red mill makes it, and I get it at whole foods in the gluten free baking section, although other grocery stores might offer it too. For that, I do a 1:1 ratio with water and don’t add in any flax or chia seeds.

  3. I never have a problem eating all the veggies up either. And if you have a massive amount you just make a big stir-fry. It’s amazing how much they shrink when cooked.

  4. Mmm – I love the look of all that produce. I spend nearly all my grocery budget on fruit and veggies and honestly love every bite!

  5. I love clementines, but find when I buy a box that my enthusiasm starts to wane…and they start caving in/deflating a bit. Glad yours are good!

  7. I LOVE fresh produce too! 🙂 I’ve never had a salad from WaWa but it looks pretty good!
