Hand Me Down Tofu And Salads And Salads

Never let it be said that I’m too proud to take something that someone else doesn’t want.  Have you seen my basement?!?  Well, that’s beside the point.  I’m talking about food here.  My best friend Gail is also vegetarian.  She’d never tried tofu and thought she try it.  Now that she’s tried it, she KNOWS she doesn’t like it.  And she’s the kind of person who can’t be swayed if she doesn’t like something.

Therefore…Hand Me Down Tofu.  Gail bought some and tried it and I wish I had a photo of her face when she described how she felt about it!  Not Good!

All seasoned up and ready to enjoy.  I got together a few salad-y things…

Sautéed up the tofu…

Chopped it up…and added it to my salad…

Wednesday mid-day, because I hadn’t had the chance to get anything to eat, I was drawn to my latest obsession…

Sunflower butter and Honeycrisp apple!

So Good…mmm

While I worked on sorting and tossing…and I got a LOT accomplished 😉 I had a crock pot full of pinto beans crocking away.

Fresh beans mean…another Salad!

The usual suspects along with a fresh batch of bulgur.  I’m so happy that I found a good way to make it easily.  1 cup of bulgur, 1 and 3/4 cups of boiling water, cover and leave it alone.  I put it in the microwave just to keep it out of the way and I think being enclosed like that might keep the heat in and make it fluffier.  Anyway, it comes out perfectly every time now!

Added in my wonderful Cabot 50% reduced fat shredded cheddar cheese…and it was a perfect, delicious Salad…in my Big Purple Bowl, of course! 😉

Sadly, the LAST of my wonderful Cabot cheese…

All gone… 😦  I’ll have to head out today to get some more.  I really am impressed with this and can’t believe that I never found Cabot before.

My Birthday Flowers are still going strong after a week.  How nice to have that spark of color around the house.

Rainy Thursday…lots to do.  Ralph has a dentist appointment.  I’m hoping to stay home in order to continue my projects.  It feels so good to say I will accomplish something today.  I finally seem to be getting things done.  I LOVE IT!!

  4. I love tofu! My friend actually reacted the same way when she tried it and I got the hand me down tofu. I’m really picky about it though. It has to be cooked just how I like it!

  5. I pursuaded my parents to try tofu. My Dad likes anything, so he was OK, but my Mum wasn’t keen on it – she said it reminded her of banana, which is weird!

  7. First time commenter here – I see that everyone in the blog world loves the sunflower butter. I’m wondering, what is so different about it? Is it smoother or creamier or tastier somehow?

    • Hi Ella…thanks for stopping by! I had heard a lot about the sunflower butter for a long time, too. I only tried it this week for the first time. I love the taste of sunflower seeds in salads and just by the handful. To me, the butter tastes like the sunflower seeds, different from peanut butter. It’s a lot more liquid-y than PB.     For the crock pot beans, what do you do? Add dry beans and water? How long to you leave it. I have never made crock pot beans of any kind…

    • Hi Amy! You soak your beans overnight. In the morning, rinse the beans and add them to your crockpot, fill with water to about 2 inches over the beans. Now comes the tricky part and the first time you make them you should try to be around. Depending on what kind of bean you’re cooking and how hot your crockpot gets the length of time will vary. I made black beans last week that were perfect at 7 hours on high. I made pinto beans yesterday and that was a little too long for them They were fine, but I just forgot to check them. My crockpot is very old and gets very hot on high. Of course you could cook them on low for longer, but you would probably still need to check to see if the need the full time. Word of warning-be VERY careful when you drain the water off. it is very hot and I almost always burn myself. If you buy your beans in bags in the grocery store, I think most of them have the directions on them. If you have any other questions, feel free to get back to me. I love them, they’re always in the fridge and they are so thrifty! Good luck!

  11. Ah – I want a crock pot so badly! Such an easy way to prepare beans. I just need more kitchen space!

    • Hi Laura! I have almost no counter space and very little storage space. My crock pot is the only thing I keep in the cabinet right under the counter. I use it so much. The great thing is they are so inexpensive and seem to last forever. Mine is over 30 years old and still going strong!
