Doctors and Breakfast and Dinner

Tuesday, Ralph and I had a short road trip for him to have his 6 month check up with our family doctor.  It’s always fun to go there because everyone is so friendly and nice and since we’re just going for a routine check up, there’s nothing to be concerned about.  Ralph has known the office staff for years.

This little character has a name but I can’t remember it right now.  He always dresses for holidays and he’s a fun thing to see in the hallway!

After a good check up, we were ready for breakfast.  We stopped at the Meadows Diner.  We always seem to go there after a doctor’s appointment.  It’s something to look forward to!  This is the diner where I usually get the combo of a Greek salad and a delicious veggie burger.  I’m trying to branch out because I sound so boring in my posts!

I tried something new.  The Meadows Special.  It was on their breakfast menu under the healthier options.  I’m sure it was somewhat healthier, but it was Delicious!!

It was an egg white omelette with portabella mushrooms, tomatoes, broccoli and asparagus.  Accompanied by a side of cottage cheese.  In recent months, I usually ask for sliced tomatoes instead of potatoes, but I’d never thought of asking for cottage cheese.  What a great idea!  It was a delicious combo.  I will order this again!

Since Wednesday was such a cold and rainy day, I decided I needed something warm and comfy.

I also wanted something easy.  Enter a couple of my recent finds.  The tomato, okra and corn combo I bought at Aldi’s last week, whole wheat elbow macaroni, crock pot black beans and some of the yummy Cabot’s 50% reduced fat cheese.

Then in an effort to reduce my dish washing, I drained the pasta and started cooking in the same pot!  How clever am I?!? 😉

I combined the tomato, okra and corn with the black beans.  That batch of crock pot beans is almost finished.  Must make more beans, Must make more beans…oops…The Zombie Vegetarian just snuck in there.

I poured the mixture over the pasta…

…then topped it with the Cabot cheese.  It turned into a wonderful cheesy, gooey mess.  It was so tasty!!  I need to get back to Aldi’s in the next few days to get more of that combo.  It would make a good soup base, too, so I need more! 🙂

We’re off this afternoon for what should be the last official Birthday celebration.  I may still do a little more celebrating, but nothing official… 😉  Lunch with Ralph’s family.  It should be fun.

As I was writing this, I noticed that the light coming through the curtains was an unusual color.  I went outside and found this…

Beautiful sky!  A nice way to start the day.

  5. I like all your fast and easy recipes. They are so full of healthy ingredients without a lot of fuss. I need to get better at that. I am always washing at least 3 pan/pots after dinner! Ugh…

    • Hi Amy! I’ve been know to fill the sink with pots, but I try to be fast and easy. Glad you like my “recipes.” I do a lot of making it up as I go along. Then I don’t know how to do it again! I’ve started to try to write things down so I can remember!

    • Thanks, Regan! I had never tried Cabot until this recent purchase. Sometimes reduced fat cheese either doesn’t taste good, doesn’t melt or both. Your cheese is Excellent and I will buy it again and keep telling people about it!
