Which Vegetarian Am I??

I want to start today by wishing a Happy Birthday to the best sister-in-law that anyone could have.

Maddie is the sweetest person and a big supporter of BCDC or as she affectionately calls it, “Cookies.” She’s a big supporter of Ralph and Me in everything we do.

So, Food, WIAW…What a Day!  Jenn over at Peas & Crayons is truly creating a community of bloggers.  It’s such fun to get together and read what the bloggers are eating.  It’s a good resource for me to find new blogs I like and get ideas…food ideas…food…

Along with trying to be the Thrifty Vegetarian, I’m also trying to not be the Bored Vegetarian.  I don’t actually get bored with my food.  Those of you who read BCDC on a regular basis can see that I’m rather predictable. That’s not because I can’t think of anything else to eat, I DON’T think of anything else to eat.  I almost forget that I have options.  I guess I’m sort of the Zombie Vegetarian.

Anyway, I have a few things that are different over the last few day.  Not necessarily interesting, just different. 😉

Cottage cheese with lots of ground black pepper and sweet pickle relish.  Lots of people turn their noses up at cottage cheese, but believe me this is delicious.  Even better over some greens, but I hadn’t been to the produce place yet.  😦

Then I had all of those black beans from the crock pot.  What to do?

Well, I had potatoes so I cooked one up in the microwave.  I never knew how to microwave a “baked” potato until I met Ralph.  I think that’s one of the best things he’s ever taught me! 😉

I heated together 1 cup of black beans, 1 cup of frozen corn and about a cup and a half of salsa.

…then topped it with romano cheese.  It would have been even better with cheddar, but I used what I had.  I had never thought of doing this before, but it was really delicious and very filling.  It was quick and easy and as you all know, that’s the recipe for me!

Wednesday night I had the pleasure of going to to dinner with two of my Weight Watchers friends, Kristen and Debbie.  We went to the Telford Inn in Mantua.  It’s a wonderful old inn that has been beautifully renovated.  It’s owned and operated by a family that I used to work for when I was a travel agent. 

I had a wonderful salad called the Telford’s Victorian.  It had greens, crumbled bleu cheese, carmelized candied walnuts and apples and a cranberry vinaigrette.  It was delicious.  Unfortunately, having dinner with us was the Zombie Vegetarian.  Although there was much talk and discussion about blogging and BCDC and Kristen, Sweetly, the Zombie Vegetarian completely forgot to take any pictures!  We had a lovely evening, never the less!

It’s Thursday now and it’s raining.  Not sure what the day will hold. Lots to do as always. I’ll forget about the rain and just think about this…

Blue skies and mountains…what more could I ask.

  1. ah, cottage cheese with relish…Gram would be so proud. The little guy loves cottage cheese, has since he was a little tyke! I love it, too. But, I fear I love it too much and would eat it daily and that would not be good. I made the mistake of getting cheese sticks for when Michael was here…they found out my name….they call me…all the time….

    • But it’s tasty, Val! It really is. My favorite way is…make a bed of greens of your choice (romaine for me) dice up a few roma tomatoes, add the cottage cheese with the relish and black pepper, then add sliced black olives. The Very Best!! My friend that I worked with at the hospital called it a Fran Salad. I like that!

  3. I’ve been using fat free cottage cheese as a quick recovery meal after workouts. Seems to be good. I like mine on the sweet side though so I’ll have a little wildflower honey or a half teaspoon of raspberry jam.

    So… how DO you microwave a potato?

    • Hi Jen! Thanks for stopping by at BCDC!! My favorite sweet way to eat the FF cottage cheese is with apple butter. Apparently it’s an old Pennsylvania Dutch dish. You mix the two together. It is so sweet and creamy and tastes VERY decaden, but of course isn’t. Mmmm…think I need to do that tonight….Come back to visit often!!

  4. Honestly, I find it a bit stressful to try to come up with new food all the time. If I like what I’m eating…and my family likes it…and it’s good for me…then I really don’t feel the need to switch things up! Zombie vegetarians unite!

  5. I love fast and easy meals, with three little ones running my life, i need that most of the time otherwise I wouldnt have time to eat! Crazy. Love mexican style food, it can always be thrown together and taste amazing. 🙂 Very pretty picture of the blue skies and mountains.

    • Amy, I’m all about fast and easy with lots of flavor. I try to share as many of my odd concoctions I can. I’ve been doing this for years. I really wonder sometimes why I have cookbooks…I’m always making things up! So glad you stopped by. Please come back often. The blue skies were taken in Silver City New Mexico. We have a home there and we’re trying to get moved out there. It’s and ongoing project! Stay tuned!

  6. I eat a mostly vegetarian diet and even though I tend, like you, to eat a lot of the same foods, I never get bored. Fruits, veggies, grains…….. endless possibilities.
