Life Is A Banquet-WIAW Style

I’m so excited to be part of the What I Ate Wednesday party again, sponsored by Jenn at Peas & Crayons.  Reading her post today, she did on the road eats which is where I was last Wednesday and unable to play with everyone else!  But I’m back in the game and I proudly present…

Peas and Crayons

At Ralph’s Army Reunion, Saturday is always the Big Day, the day of the banquet.  It also tends to be the busiest day because everyone knows that it’s the last full day of the reunion and we try to pack in as much as we possibly can.

We were up early for breakfast.  I had a wonderful veggie omelette which had spinach, tomatoes, onions and peppers, sliced tomatoes on the side please.

Really terrific!  Also terrific were some of our friends we were breakfasting with…

We went to lunch with our friends Sheila and Ron to a restaurant called Flatirons.  We had a bit of an adventure finding the restaurant, but I thought it was worth it.

Started with a salad…

…quite substantial for a side salad.

Then this wonderful spinach wrap with, hummus, goat cheese, tomatoes and lettuce.  Delicious! 

Dinner found us at the banquet!  I was looking forward to this.  Tom who was in charge of the Reunion had told me he sampled all of the food offerings during his preparation for the Reunion and was sure I would enjoy the vegetarian entrée he’d selected.  He was right!  I forgot a photo of my salad, but it was…a salad!  Good!

My entrée was vegetable ravioli…

The ravioli were huge and so was the serving!  I’d never had ravioli like this before, they were actually stuffed with veggies and cheese, then topped with marinara sauce and more cheese.  It was wonderful!

Then…Dessert!!

I have to say, this was one of my all time Best Dessert Experiences!!  It was cheesecake with raspberry swirled in it and on top.  It wasn’t a sweet flavor, more tangy like real raspberries would be.   It almost tasted like blackberries.  It was just wonderful.  I was in love!

After the banquet, we eventually made our way back to the Hospitality Suite that’s always set up at the reunions.  Some of our friends were making early departures on Sunday and this would be our last chance to see them.

Thought this was a great day to use for What I Ate Wednesday…I certainly did EAT!!!  It’s always such fun to be part of it.

We’re still having too much fun in New Mexico.  Tomorrow I’ll get all caught up on what’s happening.  Tonight is my first Weight Watchers meeting in NM.  I’m looking forward to it and dreading it all at the same time.  I’m expecting a gain ( do ya think?!?) but nothing I can’t deal with.  I’ve been doing much better since we’ve been here, starting to get back to my routine so next week’s weigh-in should be more to my liking.

Lots planned for the day.  I LOVE IT HERE!!

  1. Wow…I wish I could eat like that every day!!! That omelette looks so delicious… I laughed at the picture of you and Lynn, because the background and the way your shoulder is pressing on hers makes it look like you took 2 photos and just stuck them side-by-side. Love it!

    • Gosh, Steph…self-photos are such a challenge for me! I keep trying. I really only used this one because I was trying to explain the whole blog thing and the photos! Crazy!! The food was incredible and trust me…I DO NOT eat that way every day!

  5. Cheesecake & a weigh in, you are awesome. But that’s life right? I am glad you are loving your new area. There is a link to the granola on my post today. You should be able to just click on it. I love granola so much. Over frozen cherries and greek yogurt is the best!

    • Marie, where I was sitting when I read your post the sun was on the computer screen and I couldn’t see the link…Duh!! Greek yogurt is the best and I really should buy some frozen fruit when I get back to NJ. We’re only in NM for a couple of weeks, but with any luck we’ll be here for real all the time! Can’t Wait!
