I don’t know why but I woke up Tuesday feeling a little out of kilter. I didn’t feel sick, didn’t have a headache. Just not feeling myself. My determination to stay on track with my food helped me to get some focus to my day.
I got 40 minutes on the stationary bike. I made sure to add in arm work while biking AND reading. It gets tricky sometimes and there are days when I have to chase the exercise ball across the floor because I lose my grip (in Many ways!!) but it’s good for me so I do it.
Speaking of reading, I finished The Little Book by Selden Edwards.
I really need to start a book blog, but haven’t gotten to it yet. In the mean time, I thought this was terrific. I’m a big fan of good twists and turns in books and movies. This book served up a good helping of that!
For something light I’m now reading Certain Girls by Jennifer Weiner.
I like her books and she’s from Philadelphia so many times she talks about places I know. I was able to score some “must reads” at thrift stores in Florida but I’m saving them for our big road trip. 😉
Back to me being proud of staying on track on Tuesday…Couldn’t wait to get to my overnight oats…it had been SO long!

We had some errands to run so we ran into the Gateway Diner for some lunch. Trying hard to keep my promise to be on track, I ordered a medium Greek salad…hold the potato salad…just kidding, we’re not in Florida…hold the anchovies…dressing on the side please.
I hadn’t had a Greek salad there but it was good! Just what I needed.
At home, I had these beauties waiting for me…
Fancied up with Mrs. Dash Fiesta Lime seasoning, 2 Tbsp olive oil, 1 Tbsp balsamic vinegar and some ground black pepper. Marinated since early afternoon. Cooked up some quinoa in veggie broth…I always forget how much I love quinoa until I make it again! It loves me because it gives me protein!! 😉
Added 1.5 cups of beans and 1 cup of quinoa to romaine, tomato, red bell pepper. So simple and so good.
The pintos made their own dressing from the marinade. Delicious dinner. Very filling, too. My trick of eating dinner later (I ate at just about 7pm) really helps. It keeps me full and I don’t go looking for a snack. My only snack was a caramel Tootsie Pop. I’m eating them very sparingly. I want them to last a long time. I need to check Ebay where my friend found them and stock up!!
I feel good about my Tuesday. Wednesday has started out bright and sunny…Thank you Very Much!! I think I’ll participate in What I Ate Wednesday which was started by the young lady over at Peas & Crayons. For some reason, I can’t remember her name at the moment. Sorry!! It’s a great idea and this will be my first time participating, so lets see how it goes!
