I’m trying my best to get on track, stay on track with my eating. After thinking about it, I thought that maybe if I went back to some of my habits from when I was working I might do a little better.
I started out with oat bran for breakfast. I don’t think I’ve mentioned it on here, but I tried it for the first time over the weekend. I did mention it on Twitter and just realized I hadn’t mentioned it here. I didn’t take any photos. (surprise!) but I love it so much I can’t contain myself. It cooks well in the microwave and it’s wonderful. I just add a little Splenda and some Almond Breeze and it’s heaven! 🙂 I’m going to make a big bowl of it as soon as I finish this post! (maybe THEN I’ll have a photo!)
We went to Verchio’s for produce…this was my loot…
Actually a little disappointing because I wanted romaine, escarole and Brussel sprouts but they didn’t have any. But they did have my favorite clementines, although the box I bought for $2 last time was $5 this time. The price fluctuates so I didn’t let it bother me.
My go to lunch when I was working was this…
A combo of 1 can of black beans, rinsed…
…mixed with a 16 oz jar of salsa and Tabasco Green Pepper Sauce..
Not necessarily pretty, but very tasty!
I was looking forward to it so much that I almost forgot to take a picture so this is a partially eaten salad! I mix it all with romaine lettuce and I topped it with Weight Watcher’s shredded cheddar cheese. (I don’t usually buy the WW brand because it’s more expensive, but it was on sale for $1.49 a bag…I bought 2!)
I love this salad because it’s very tasty and very satisfying. It holds me for quite a while.
I spent the afternoon at my friend Gail’s house trying to help with her Mom, who isn’t doing well. She’s 91 Bless Her Heart and Gail needs a lot of help with her. I go over whenever I can to try to be of whatever assistance I can be.
When I got home, I got dinner for Ralph and then started on something for myself. I had been thinking about this and then I realized as I was cooking that it looked a lot like lunch!
It really couldn’t be simpler. Olive oil and garlic (where have you heard that before ?!?) sautéed, 1 can of rinsed black beans, 1 cup of frozen corn and a can of Rotel Lime and Cilantro tomatoes. I served it over couscous…
Then topped it with more of the WW shredded cheese…
It was SO delicious!! The tomatoes are just the right spiciness and it was very filling. In fact the only snack I had in the evening was 3 clementines (predictable!) and a few grapes.
I felt it was a very good day food wise and I tracked EVERYTHING! I’m also continuing to track my protein to prove my point.
My meditation practice went well in the morning. Some days I’m more focused than others which is frustrating. However, I think that is one of the points of meditation, to focus. I’m getting there. I still haven’t fit in an evening practice, but I am hoping to do that.
So Happy Fat Tuesday! I’m going to do my best to NOT make it a fat Tuesday for me. Tomorrow is Ash Wednesday…my old Catholic roots should inspire me to behave! Beautiful sunny day out there! Enjoy it!
