Yesterday was another of those disjointed days. I had gone to Verchio’s again on Thursday to load up on produce.
Stocked up on clementines, Romaine, plum tomatoes, Rome apples, bananas, brussels sprouts and baby Italian eggplants. Looking forward to roasting the Brussel sprouts.
I did have a banana realization yesterday. I’ve decided I am still not a fan. Used one in my oatmeal yesterday and had a really weird thing happen. A bunch of my chia seeds wadded themselves around a slice of banana and when I ate it…Yuck! 😦 I don’t think I’m going to try that again.
I knew I had been off track all week and that weigh in was today, so I tried my best to stay with in my WW points. For lunch, I had a salad with Romaine, plum tomato, sunflower seeds, pumpkin seeds and what was left of the baked tofu I got at Trader Joe’s a few weeks ago. Still good fortunately.
For dinner, I did a quick stir fry.
Zucchini, eggplant, plum tomato and the last of the Portobellos. Started with garlic and olive oil ( boy am I predictable!) added ground black pepper and Mrs. Dash.
Looks like dinner to me! I served it over whole wheat pasta. I had exactly enough in a ziplock bag to make one serving on WW so that made it easy to count the points. Dressed it up with some Locatelli cheese…that makes everything taste good! 🙂
I had a wonderful experience this morning. Just before leaving for Weight Watchers, I looked out of the window and noted how dark and grey the sky looked. By the time I put on my coat moments later, the sky was in flames and I got outside in time to snap these…
How can you have a bad day with a start like this?!? To top it off, I lost 1.2 pounds at WW and I’m now Free again. Gee whiz, I need to keep things under control, because Free is the place to be! 🙂
Tonight, we’re off to a benefit for a member of our Weight Watcher family. It should be fun, but will probably also be emotional. I’m so glad I’ll get to spend time with my WW buddies. Have a great Day!
