WIAW~ October 21, 2015

It’s that Happy time of week when we get together over at Peas & Crayons and talk about what we’ve been eating all week.  It’s What I Ate Wednesday!  When you’re finished here, be sure to stop over there to see what everyone’s been munching on all week long!

I’m always up for a breakfast at the diner.  My best friend Gail and I took our other best friend Alice and Gail’s brother, Ray to the airport for a flight to Florida.  No problem except that we had to leave at 4:30 am!!  Again, no problem, but we wanted to go to breakfast and contrary to what we thought, all of the local diners are Not open at 5 am! We went to one that had recently reopened after renovations.  It looked nice but this was 5 am.  There were only 2 other people in the diner and we had to wait almost 25 minutes for our food.  It wasn’t that great when we finally got it.

But it was better than some early diner breakfasts I’ve had.  We headed to the gym afterwards to work it off.

I got a better breakfast at home on another day.  I like trying unique things with omelettes.

Not the prettiest photo but very tasty.  Egg beaters and egg whites seasoned with Mrs. Dash and chipotle powder.  Inside chopped broccoli, 2% cheese and a quarter cup of black beans.  Topped with Cholula hot sauce, my new favorite.  The small addition of the quarter cup of black beans makes this extremely filling.  I add them in whenever I have the home-made beans in the fridge.

Sometimes I’ll take a little shortcut.  Ralph brought home a salad from a local convenience store labeled “super food” salad.  It was made with kale, slivered almonds and chopped apples.

I added some chopped spinach, cucumbers, tomatoes, black beans, 2 % cheese and light balsamic vinaigrette.  It was delicious!  It’s nice to take a little help when you can.  I love doing that with store-bought salads.  I can always find a way to make them more substantial or add some protein.

One more salad.  Ralph and I went to one of our favorite restaurants on Monday afternoon.  In line with my continued efforts to get back on and stay on track with my food choices, I had already decided what I would have before we got there.  When the server brought the menu, I left it on the table and didn’t even look.  I didn’t want to be tempted to stray from my plan.

This restaurant has the best Greek Salad I’ve ever tried.  It looked better but I started to poke around at it.  I forgot that I’m blogging again and needed a nice photo!  Regardless, I think it’s beautiful and I know it was delicious.  I also asked for only one roll with it, that way I wouldn’t be tempted by an entire basket.  I keep trying!

That’s What I Ate Wednesday for me this week.  I need to get back to doing more cooking and coming up with some unique things.  We’ll see how I do.  Whatever I come up with, you can be sure I’ll be back here next Wednesday.  Be sure to stop over at Peas & Crayons to check out the other linkers!

WIAW~Who Knows Where or When

Hello!  Yes, I am still alive, still recovering from my bilateral hip replacement but pretty much doing fabulously!  I still have probably two weeks of physical therapy left and (being the Good Patient that I am!) doing my exercises daily and using my cane for another week.  I’m trying hard to get out and get some walking in every day because my physical therapist tells me that’s important.  The days that I am able to get extra walking in, I do feel better.  Eventually, I will write a post All About the Adventure that was my surgery.  In the meantime, I move along trying to feel like my old self.

Part of that is getting back to blogging.  I have missed it So Much!!  I need to get a schedule set up for myself again and stick with it.  What better way of getting back on schedule than joining in for What I Ate Wednesday hostessed by the lovely Jenn at Peas and Crayons?  So here goes!

What I Ate Wednesday: FALL into Good Habits

My food offerings are somewhat random as you can probably tell from my title.  Just a few tasty things, some of which I’ve saved for a few weeks, always intending to do a post!

Pumpkin pancakes


Ralph and I went out to breakfast on Tuesday morning.  Right before going into the diner, I swore to myself that I would make a good choice, allowing myself to get back on track with my food.  So of course, I ordered pumpkin pancakes!  I did ask for the sugar-free syrup…Do I get points for that?!?

One of my all time favorites…pepper and egg sandwich with American cheese from our local pizzeria.  I love this and it never fails to satisfy.  Also, it always reminds me of my Mom.  Good enough for me!

Ralph and I went to a wonderful wedding for the son of close family friends.  I was very happy when along with the usual meat and fish choices, the invitation offered a stuffed mushroom.  Having no idea what that might be, I made that choice.  Was I ever pleasantly surprised.

The base was rice, then the Portobello,  It was then stuffed with what I think was a tasty puree of white beans and wonderful herbs and spices.  Topped with yellow squash although several people have said it looks like potato chips.  No chips but it was Delicious and very filling.  I loved it!

Of course, it wouldn’t be BCDC without at least one salad.

Birthday Greek salad


We have recently started going to a local Italian restaurant that we hadn’t gone to before.  This is their Greek salad.  I love the combination of the greens, olives, tomatoes and feta.  It’s a much more delicate Greek salad than some of the ones I get around here.  It is just delicious.  This restaurant has other good choices too, but I think this might be my favorite.

Just typing up this post is getting me back into the feel of blogging.  It’s not that I haven’t wanted to, I just haven’t had the enthusiasm for it.  I feel that coming back.  Maybe it’s the Fall.  I always want to start something in the Fall.  In this case, I’m re-starting something.  The whole idea makes me happy!

WIAW~Food Between The Boxes

Silly title, I know, but I really feel that’s what’s been happening around here lately.  I sort and pack boxes and try to fit some food in between.  I suppose I should photograph some of my food ON the boxes…that would be fun.  But no, I don’t think so.

My meals are from all over the place this week.



One of my favorite breakfasts…egg substitute, egg whites and garlic chili sauce.  I like this so much that I had eaten half before I remembered to do a photo.  It’s way bigger than this to start.



Veggie burger on a salad…Yum!!  I actually had this twice this week…I know what I like.



Another favorite this week has been bran flakes and soy milk.  I’m trying to get breakfast in on a more regular basis and I really like this!



Fourth of July at Ele’s house!  I made the big salad and brought my own beans.  I had two bowls that looked just like this.  Love Ele’s deviled eggs…Yum!!



Ok…so there was Funfetti cake for dessert…so good!  Ele makes the best cakes!



Bran flakes and soy milk again…this time with banana! I’m happy that I’ve been doing better with breakfasts lately.

Vegetable lo mein.  I haven’t had it in a long time and I really enjoyed it.



Ok…so there Had to be ice cream somewhere this week!  I had rum raisin and Ralph had black cherry.  So good.  We’ve got to make the most of it…they close in September!!



…and just to prove my point…one last breakfast.  Scrambled eggs and sliced tomatoes.  Always a winner.

WIAW~Living In The Maelstrom

( initial capital letter ) a famous hazardous whirlpool off the NW coast of Norway.
Well…I’m no where near Norway, but the first two definitions are fairly appropriate to the state of affairs in my house.  I’ve been working hard all week to crack this nut and although I am by no means completed, I am feeling hopeful.  I will get it done!
But that doesn’t mean that I can’t participate in What I Ate Wednesday…that fabulous food maelstrom that happens weekly over at Peas & Crayons, led by the lovely Jenn!
Spooky Snacks and Healthy Halloween Treats
Though I haven’t really gotten into snack and treats all that much, the most obvious reason being that if I have them around, I’ll eat them…here’s WIAW from the Maelstrom (just love using that big word…which I looked UP!  So excited that it actually meant what I thought it meant!! ;-)   )  My food is sort of a combo of various days but I guess that’s what I usually do!
Sunday breakfast always seems to be an egg sandwich on a sandwich thin.  Enlivened up here by some sriracha and a Smiley!!  Topped with just a touch of Locatelli cheese…that’ll liven up anything!
You’ve heard of oats in a jar…this is cottage cheese in the container…
Why dirty a bowl when there’s just about a 1 cup serving left in the container?!  Topped with LOTS of ground black pepper and sweet pickle relish…if you think this doesn’t look good, then…Sorry, but you’re Wrong!  It’s delicious!
Crock pot apples topped with plain fat-free yogurt and a bit of cinnamon.  So delicious.  I’ve got to get to work on the bag full of apples I got earlier in the week.  I’m so excited!!  These are just delicious!
A yummy early lunch from Monday.  When Ralph goes for his bi-annual (I looked it up and bi-annual is right!) doctor’s appointment we always stop at a particular diner that serves me this plate of deliciousness.  It’s called an Athenia burger plate and is meant to have Greek salad and a regular burger.  They’re happy to swap in a veggie burger which is so good, I’ve asked them for either the recipe or where they get them.  They will give me neither…  :-(  Wish I could find the answer to that question!  This is just the right amount…very satisfying.
Monday night’s dinner was another of my odd combos.  In the spirit of cleaning up and cleaning out…I’m doing the same thing with my freezer.  I found some Morningstar Farms chicken-ish strips.  They were in great shape, but the broccoli I found was in less than stellar condition, hence it doesn’t look very green.
Made a quick batch of couscous.  While that was plumping, I sautéed onion, garlic and red bell pepper, my last, I really need to get to the produce market!  When that had cooked a bit, I added the chicken-ish strips and the broccoli which was really a freezer burned lump, but it added volume!  Added some veggie broth (which I need to tell you all about soon) and just before it was finished I added a half cup of cottage cheese for some extra protein and cheesiness.  Topped it all with some Locatelli cheese.  This was so good and very filling.  I love these bizarre combos that I come up with!

Not The Way It Is At All

I know that I’m a slug sometimes.  I take full responsibility for that.  I’ve even developed a sort of pride in my slugdom.  If I’m going to be a slug, be a very good slug.  Read a book all day and nothing else except for food and bathroom breaks.  THAT”S a slug in action…you should excuse the mixed metaphor.

But, I haven’t really been a slug this week, yet I feel like one.

I did some, admittedly not much, but some reorganizing of my closet area in expectation of putting in a new clothes hanging rack.  Of course, that has to be assembled, but one step at a time!

I’ve started to work on cleaning out my car which is more like a mobile storage unit, but still does transportation duty. ;-) I believe I’ve removed all of the legitimate trash from the car. I found 4 rain coats and 4 umbrellas…guess I’m Really worried about the rain!  Oh, yes, also a rain poncho that Ralph put in …Just In Case!!

There is still an entire box of rummage sale/yard sale/Goodwill household finds that I want for our house in New Mexico.  If I had done this before the trip in August, I could have taken them all there and wouldn’t have to worry about them now!  There’s also a box filled with books.  Some came from Florida after my trip in January.  I didn’t actually get them until April when Gail drove back.  Others again are rummage sale/yard sale/Goodwill treasures.  Some though are destined for My yard sale in the Spring.  Thank goodness!

Also found a bag full of CD’s that I used to listen to in my office to sooth me when people were driving me crazy.  I had no idea where they were and I was glad to find them.

At least I no longer have the urn with my ex-father-in-law’s ashes back there.  I was given custody for various reasons too long and complicated to go into.  He rode with me for quite a while until we figured out what to do with him.  I thought of him as my guardian angel on my long commute.  I would talk to him sometimes.  He received his proper burial about 2 years ago.  I miss his comforting presence back there.

The car is probably going into the shop today, so I need to get more of my treasures out of there.

There has of course been food in my week.  A nearly empty jar of Sunbutter made yummy overnight oats…

The day that Ralph and I spoke to the mechanic about getting the car fixed we stopped at Taco Bell for lunch.

I had their veggie cantina bowl.  This was really good. Fairly high in points, but it was tasty enough to be worth it!

Last night, I was hungry but again playing the part of the slug.  I made cous cous spiced with Mrs. Dash Fiesta Lime.  That’s not  much work…In the microwave, I heated some of my crock pot black beans (it’s so great when they are waiting in the fridge for me!), some frozen corn, some veggie broth and lots of Penzey’s Arizona Dreaming seasoning.

Topped it with some Locatelli cheese and in about 8 minutes…dinner was served! It doesn’t look all that appetizing (a lot of times I think that about my food!) but trust me it was delicious!

So I guess, if you total it all up, I haven’t been a slug.  Just can’t figure out why I feel that way.  Oh, well…Guess I just need to make every day productive whether it feels that way or not!!

I Dream Of Veggies

As much as I enjoyed our trip to New Mexico and the recent one to Atlanta, there was something that was missing for over a month…enough veggies.  When we were in New Mexico, I spoke about our fridge issues.  It wasn’t working so I couldn’t really stock up on fruits and veggies and make all the salads I had intended.

In Atlanta everything was a la carte, and a side salad was Very expensive.  I don’t mind paying for a salad, but $9.oo for a side salad is a little beyond me.  I suffered in silence and ate no salads except the one at the banquet.

I realized when we got back to New Jersey that I had left some veggies around the house which I had intended to give to my sister, Ele.  They served me well on Tuesday night.

With the addition of a few spotted tomatoes that I forgot about when I took the photo, lots of salt and pepper and some mystery spices from my cupboard and topped with some shredded cheese…This was delicious and filling!  My kind of dinner!

Wednesday took us to another of our family birthday lunches.  I didn’t know about this one until Monday, but as soon as I found out…I started dreaming of this…

A Greek salad topped with grilled Portobello mushrooms.  My body was craving this and I couldn’t have been happier.  This is possibly the best Greek salad around.  Mild dressing which is used lightly and with the addition of the grilled Portobello, it is a real meal!  Made me Smile! :-)

Glad they only gave me a small piece of birthday cake…I do still need to weigh in on Saturday at Weight Watchers.  I would like to have some success so that I can feel back on track after such a long time of being Off Track.

WIAW~Feeling Like A Human

In all my daze and confusion during our recent trip to New Mexico and California, I never forgot What I Ate Wednesday.  One week I had to post a non-food edition, but hey, I still TALKED about food and I was here for the party.  I’m feeling more like a human now and I’m getting back to more of a normal routine…well, normal for me at least! It’s Fall and I love Jenn’s new WIAW logo…there I said it!

Tuesday was the first day where I felt back on track in food and in other aspects.  Started with a good breakfast.

Barbara’s shredded oats-leftover and brought back from NM.  I can’t find them anywhere in the regular grocery stores here.  I have to start looking further afield.  Delicious with the Silk Pure Almond!  This bowl makes me Happy!

In my effort to get back on track, I made egg salad in the morning.  It’s a great thing to have on hand because both Ralph and I can eat it for lunches (oh, Ok, for snacks sometimes too!)  A big plop of it (Ok, I measured…it was a half cup) on top of some of the leftover salad from the big salad I made to take to Ele’s on Saturday night.  I love when I have already made salad in the fridge.  I should probably do it more often.  A little bit of Mrs. Dash Fiesta Lime and some pickled jalapeno spiced it up.  I’ve recently gotten hooked by these tasty beauties.  I had them at Ele’s house and I can get them in a jar at Aldi…cheap!  I forget what I paid, but I’ve put them in eggs, on veggie burgers…Yum!  Also love my Free yellow bowl! Perfect size for lunch.

Dinner was fairly standard…the rest of the leftover salad with some added celery, green bell peppers and tomatoes (which didn’t go in until after the photo!)  Topped with some shredded cheese and Catalina dressing (also brought back unopened from NM, couldn’t open it because of the fridge issues) Oh, yes…a Morningstar Farms spicy black bean burger, too.  They are still my favorite!  All mixed up in my very favorite…The Big Purple Bowl!!

We’ve had a great deal of rain the last few days and even though I’ve been starting to feel like getting out to walk again, the weather has Not cooperated.  I know I need to start to get exercise again.  So it was 40 minutes on the exercise bike for me.  Great way to get some exercise in and some reading…well I’m exercising too, right?! ;-)  Wish I had a treadmill…once we move, I’m voting for a treadmill!

I also feel VERY accomplished because I did a lot toward sorting and packing.  My hairdresser is buying a set of dishes that I had packed away.  They were packed in plastic bins wrapped in clothes.  I thought they were my clothes but they were shirts of Ralph’s.  As I packed up the dishes in the new way I’ve learned (I’ll explain that sometime!) Ralph tried on all of the shirts to see if they still fit.  :-(  Only weeded out one shirt, but I’ll find more. 

Three plastic bins OUT of the bedroom and ready to be packed with something else!  Moving them out allowed me to get to several boxes that were marked “Books Not Read.” OK! I went through those books (mostly Goodwill finds so-Cheap!) Found two duplicates of things I’ve bought again, because I didn’t realize I had them! But weeded through them as well, pulling out books I don’t think I really want to read.  More for the Yard Sale…Hooray!!  I was able to then pack in some others that were in my towering (toppling) To Read pile.  I now have more room in the bedroom and more fodder for the Yard Sale!

That brings us to the end of What I Ate Wednesday…And Everything Else I Did!!  I felt very accomplished by the end of the day.  I need more days like this in the food department and in the sorting and packing department as well!  I think it’s still rainy out there, so no walk for me today, but I WILL be on the bike!
