Strange But Good~Quick and Easy

If there were no other reasons to love Friday, I would still be excited to be participating in Strange But Good!  This is the fun link up created by Laura at Sprint 2 The Table.  I obviously make strange choices that I consider good and it’s great to be surrounded by Other Strangers!

Not really sure if this qualifies for Strange But Good, but some people think it sounds odd.  I started eating something like this when I was in Florida with my best friend, Gail.  It’s her idea really, so I need to give her credit.    :-)

Sorry for the messy counter…I’m still working on things since being sick.

Anyway…start with a glass measuring cup.  Spray with non stick cooking spray.  Add 1/2 cup of liquid egg substitute and 1/2 cup of liquid egg whites.  I get these at Aldi, but they don’t always have them.  I stock up and put them in the freezer when they do have them.  So much less expensive than name brands!  A handful of cut frozen asparagus which I had cut and put in the fridge the night before.

Cook for 1 minute 20 seconds.  Give it a few seconds and then give it another 1 minute 20 seconds.  If you do it all at once, it can overflow.  Can’t chance losing anything.    ;-)

It comes out in sort of a lump.  That’s actually good, makes it easy to get out of the measuring cup. The cooking spray helps with that.

When I cut into it, I realized it was still a bit liquid in the center.  The times I gave were for the egg mixture with nothing else in it.  For future reference, I’ll know that when I add veggies, it requires a bit more time.  I put it back in for another 30 seconds.

Cut up and with some ground black pepper (always!) added, this was delicious and filling.  Adding the veggies made it even more satisfying.  The regular egg substitute counts for 2 Points, the egg whites and asparagus count for 0 Points.  This does not look as big in the photo as it did in person.   Great breakfast for my Weight Watchers purposes!  Also 22 grams of protein!  Ok, by me!

I ate this early, because I needed to eat before taking my LAST dose of antibiotics.  So happy about that.  They certainly have done the trick for me.  I’m feeling so much better and even added some exercise back in yesterday…a Very Slow 30 minutes on my exercise bike.  Gotta get moving again, I’ve been feeling like such a Slug!

Strange But Good…You Put What In What?!

I’ve always been strange but have I always been good?  Am I even good, now?!

I can’t answer that question but Laura at Sprint 2 The Table has taken on the task of offering those of us who are strange (ish) food eaters a home with other strange (ish) food eaters.

Everybody and I mean Everybody in the food blog world talks about smoothies.  I love the idea of smoothies and I know I could come up with some good ones.  I am however, space challenged in my kitchen and don’t have room to have a big blender out on my counter or even my Magic Bullet for that matter.  No convenient cabinet space either.  Then there’s the matter that the time when I would want to make a smoothie, Ralph would be sleeping and well…that would just get me cranky looks.

I’ve come up with an alternate method that works pretty good and I’m trying to be creative within my own constraints.  The old “Grow Where You’re Planted” theory.

A few weeks back I showed my shake up bottle that I’ve been using.

I got it last year when I bought a sampler package of protein powder.  I used up the powder back then but haven’t used it much since. I recently started using Naturade Pea Protein Powder.  My friend Gail found it and I really like it.

I started out making it with 1 cup of almond milk, third of a cup of fat-free vanilla yogurt and one scoop of the powder.  It was good and I enjoyed it. That counted as 5 Points for me on Weight Watchers and gave me 30 grams of protein.

I tried to think of things I could put into it that would add some flavor and variety and would still work in my shake up container.  I then added a half cup of unsweetened applesauce and a bunch of cinnamon.  That was really tasty.  The applesauce and cinnamon didn’t add any Points or protein, but a lot of flavor.

This week, I suddenly remembered what was hiding in one of my cupboards.

PB2!!  Powdered peanut butter.  I mixed up 1 cup of fat-free milk, a third cup of fat-free vanilla yogurt, a scoop of the pea protein and 2 tablespoons of the PB2.  Shook it all up and it was wonderful!  The PB2 only added 1 Point for a total of 6, but it gave me 5.65 more grams of protein for a total of 35.65.  I recently noticed that our local Shoprite is carrying the PB2 so I won’t have to order it on-line.  I feel like such a dummy for not realizing I had it.  This is a great addition, It’s very tasty and boy was I full for a Long time that day.

Strange enough for you?  I’ll keep trying to come up with other things that I can shake up in my manual shaker.  Then maybe one day, I’ll actually break out the old Magic Bullet…Then there’ll be no stopping me!

Down Day

No, not in that sense…not “I’m down today.” Wednesday was sort of a down time day, I guess.

I couldn’t get motivated to do much of anything…so I Didn’t!  I don’t think I even went out of the house except to put out the recycling bin.

I should have been doing some of the many things that I need to do, but I suppose I’m looking at this week as still part of the holiday.

I probably shouldn’t have gotten out of my pj’s…could have saved some clean clothes!

Just remembered something I haven’t talked about that I’m enjoying.  My friend Gail and I are both vegetarians.  We’ve been discussing the fact that we both probably need more protein than what we usually get.  We decided to order a protein powder to see how we liked it.

Naturade Pea Protein.  Gail had done some research and decided this was a good choice to start.  It certainly gives us some protein!

20 grams per serving and a serving costs us 3 points on Weight Watchers.  Not a bad deal in my opinion.

I have a Magic Bullet and thought that would be a great way to whip up a quick smoothie.  My problem is that when I would be wanting to make a smoothie, Ralph is asleep and it would probably wake him.  Being a thoughtful wife, I looked for another alternative.

I had forgotten about this shaker bottle I had gotten along with a previous protein powder purchase.  Can’t add fruit to it, but… 1 cup of almond milk, 1/3 of a cup of fat-free vanilla yogurt and 2 Tbsp of the pea protein powder makes a pretty tasty shake.  It costs me 6 Points on WW and I get 23.3 grams of protein.  It’s actually pretty filling too.

One of these days I need to test the theory of whether the Magic Bullet would actually wake Ralph up.  Now that I’ve started this, I’d really like to try some fruit or shock of shocks…a Green Smoothie with some spinach thrown in for good measure.  Now that I’ve started, I can’t stop!!

I’m slogging my way through Pride and Prejudice and with every page re-thinking my plan of reading “classics” this year.  I refuse to stop reading the first book I’ve started for the year but to be honest, I’d like to.  After I’ve finished I’ll give a little overview of what I think.  My Mother loved it.  I love my Mother.  That’s as far as I can go with that thought!!

Thursday Is Slump Day

If Wednesday is hump day, then Thursday was slump day for me.  Actually it was and it wasn’t.  I got a lot of things accomplished around the house, but I felt like I was in a slump with my writing.  I’ll get to that but I need to give myself a pat on the back for what I did do.

Changed the bed, washed, and folded 3 loads of laundry, paid some bills and got rid of a load of junk mail that needed to be shredded.  These were leftover things that I needed to shred.  Over the last week or so, when the mail comes in, Ralph hands it to me, I go through to see what is what.  I’m usually sitting at my desk which has the shredder right next to it.  I open up the offending envelope and shred the part that needs shredding.  Envelopes and other filler from the envelope goes right into the recycling bag next to the desk.  I’m feeling that I have that stuff a little better under control and I like that.  So, see (I’m saying this to myself) I didn’t accomplish something on Thursday! :-)

I received a present in the mail.  I got a package from True Protein.  I had e-mailed them last week to ask if they would be able to send me some samples.  They kindly sent me two samples.

One is chocolate flavored pea protein, the other is vanilla flavored rice protein.  I tried the chocolate and it was tasty.  The good thing for me was that when I calculated the Weight Watchers Points, it was only 2 Points and with the 1 cup of soymilk, it became 3 Points.  For me that’s better than some of the others which are much higher in points.  This may be the protein powder for me.  I’ll see after I try the vanilla.

I had done some writing in the morning after posting on BCDC as has become my routine throughout the NaNoWriMo process.  I got about 1400 words written and planned to come back in the afternoon.  When I got back to it in the afternoon…nothing.  The story just wasn’t coming to me.  I finally wrapped it up at 2007 words.  Some of the ladies in the on-line writing group have said if it’s not working, just leave it and come back to it.  That’s what I did.  I left and watched the Food Network!

Of course, the Food Network made me hungry.  I had nothing ready and nothing planned.  After sightseeing in the fridge for a few minutes I came up with something.

sautéed it in some olive oil

I mixed together 3 eggs and some fat-free cottage cheese

With some white toast (all that was in the house) and can you say Yum?  It was really tasty and satisfying which is just as important.  No snacking later in the evening.

I guess in retrospect, it wasn’t such a slump day after all.  I need to make sure that for Friday and the rest of the weekend, the slump is over.

Protein Is The Theme

Friday started as one of those, “Why Sleep When You Can Be Awake!” days.  Woke up at 3am and you know the rest of the story.  In spite of that I think I made the most of my day.

I got my coffee (1 gram of protein from my fat-free half and half) and got right to work posting on BCDC.  When I was finished there I started on my NaNoWriMo writing.  I was becoming frustrated and stuck.  I was even at a point where I was being overcome by emotion.  My novel is based on some of my college experiences and I was amazed at the emotions brought back by thinking about it and using it as the basis for the novel.  Strange.  I had suggestions that when something like that happens, you should try to focus on the story from a different angle or from someone else’s perspective.  Actually I was told if need be, throw in a ferret!  The ferret was sitting there on my desk waiting to be called into the game but that early in the day, I didn’t need him yet.

I took a break from writing and decided I’d try one of my Spiru-tein drinks.  I wasn’t thrilled with some of the flavors in the sampler pack I got, but it was a good deal so I bought it.  I decided I’d start with the flavor I thought I’d like the least. My choice was strawberry-banana.

I mixed it in my handy shaker container with soy milk. 

Pretty in Pink and it actually tasted good.  Still not my favorite flavor, but certainly not awful.  Now I’m looking forward to my next trial.  The Spiru-tein gave me 14 grams of protein and the soymilk added 6 grams so 20 grams of protein at one time.  About a third of what I should have each day.  Pretty good in one little shake-up!

Mid afternoon I went over to see my sister Ele to help her with a few pre-Thanksgiving preparations.  We’re expecting a bit of a crowd, so we had to move some things around in the dining room.  I’ll be helping her with more things next week.  We always enjoy Thanksgiving!

When I got back from lunch, Ralph wanted food!  We decided on the Gateway Diner as we so often do.  Going along with my protein theme, this was lunch.

An onion omelette with a side of cottage cheese, dry rye toast and a big cup of hot tea because it was cold and damp here in New Jersey yesterday.  Brrr…

In trying to figure the protein for this lunch, I realize that I don’t know much about how much protein is in a food,  I’m going to need to do some research.  the website where I got this information said that eggs have 4 grams which would make my omelette 12 grams.  It said that a cup of regular cottage cheese which was about what my serving was, should be 13 grams.  That sounds like a lot so I’m going to need to do some more research on this.

When we got back from lunch, I really got to work on my writing.  My switch in perspective made a big difference.  I brought in a character I had never thought of including and it’s helping the focus and the tone.  I ended the (very long) day by breaking 20,000 words!  I was very happy about that.

A snack later was 2 rice cakes with sunflower seed butter.  I got 2 grams of protein from the rice cakes and 9 grams of protein from the sunflower seed butter.  I ended the day with 60 grams of protein.  The calculation I’ve been able to make is that I should be having 62 grams per day.  This was a pretty good day.  I still want to do some more research on how much protein is in each food.  It’s so much easier when you use the info on the label, but that’s not always available.

This sounds like a science class so I’ll get out of here.  I’m hoping for a good result at Weight Watchers when I get there today.  I’ve tried really hard all week.  I must redeem myself after last week. :-(

Back On The Move

I feel like I’m going to be all over the place with this post, so try to stick with me.  Thursday was a day for a lot of errands.  Had to get a few things in order to fix a few things in order to finish a few things.  You know…that kind of day.  I tried to make the most of my time and tried to plan out my route to make it most efficient time wise and gas wise. 

One of the things that I needed was a new battery for my pedometer. Now that’s not a hard thing to get, but I always forget what number the size is when I’m near the CVS where I can get it but I remembered today. 

One pedometer back in working order, now if I would just walk somewhere to get some steps!  It’s been hard this week to get any exercise in.  I’m spending so much time working on my NaNoWriMo project that there is a great deal of sitting involved.  If I could only figure out how I could work on the laptop while on my stationary bike, I’d be thrilled! ;-)

I mentioned the other day that I was on the search for a good protein powder.  I’m still accepting suggestions so if you’ve got ‘em, I’ll take ‘em!  While I was out, I thought I’d stop at the Vitamin Shoppe to see if they had some samples I could buy.  They didn’t have samples but the did have this.

Seven different flavors with a shake up container.  This is pretty good because it will give me the chance to sample flavors.  I’m not big on flavors for things like this other than vanilla, so this will be an adventure.  I’ll keep you posted on which flavors I like.  I also e-mailed several companies to see if I can get some samples so we’ll see how that goes.

While at CVS I found something that qualifies for Things I Didn’t Need To Know Existed…

Mint truffle Hershey Kisses.  I had a hard time catching my breath when I saw these.  You’ll all be proud of me that I walked out of the store with none of these in my bag.  I would like someone to buy a bag and give me One.  Just so I can try it…

Lunch was Q & E- quick and easy!

Cottage cheese and sweet relish in my pretty new bowl and my new little ceramic spoon.  This is one of my favorite lunches but I just forget about it.  Glad I got some cottage cheese when I went shopping earlier in the week and I have a new jar of relish waiting in the cupboard. 

Thursday morning I was telling you how foggy it was.  I want to share some photos I got of the fog and the trees…Don’t tell me you’re tired of these, I don’t want to hear it! ;-)

It was so beautiful.  I wasn’t sure it would read in the photos but fortunately it did.  Hope you enjoy them as much as I did.

I want to be sure to wish all of our Veterans a Happy Veteran’s Day.  We are safe and secure because of what they have sacrificed for us.  They have given us Freedom and have kept us safe for so many years.  If you know a Veteran, thank him or her today.  They deserve it.  Happy Veteran’s Day, Ralph and thank you for all that you did.

New ‘Do and Getting It Done

Well, if I’d thought about it, I would have taken a photo of my new ‘do when I got home last night.  It would be way too scary to take a photo now to post, so I’ll post one tomorrow when I’m looking my best ! ;-)

It feels SO much better and it really needed to be done before we leave for Clearwater on Sunday.

I got some things done around the house in preparation for being away.  Cleaned the bathroom (oh JOY!), folded laundry and on and on.  Finally around 11:30 I realized I hadn’t eaten breakfast.

Oikos Greek Yogurt, Fiber One and a banana!  See, I’m eating my bananas!  ;-) It looks a little spotty, but it was just right inside.  I have 4 more left that look just like it.  Guess I should start eating them!  I was given the Oikos and I’m not sure if I like it as much as I like Chobani.  They’re not a lot different, Chobani seems a little creamier, though.  I guess I’ll let what’s on sale dictate which I buy.  I do love the Greek yogurt though and you really can’t beat it for the protein content! :-)

I met Ele at the Church for more Rummage Prep.  It’s amazing what we’ve been able to accomplish in a few short hours each day this week.  Just a bit more today should have it ready for the Sale tomorrow!

I had to leave a little earlier than I might have to go to my hair appointment, but I’d been feeling a little light-headed all day.  I stopped home and remembered that I had some protein bars in the cabinet. 

I grabbed this Carrot Cake Clif bar.  Yum!  I forgot how good these are.  I was so hungry I didn’t take a photo first so all you get is the empty wrapper! ;-)   7 Points on Weight Watchers, but I got 10 grams of protein and it was just what I needed to tide me over until I got back home for dinner.

A few days ago ( I confess, I don’t exactly remember when…) I started to marinate some tofu.  I’m so bad on forgetting to use things.  This was from QUITE a while ago.  I had bought it at Natural Harvest Market. It’s from a company called Wild Wood Organic. It must be good stuff because when I just went to look at the label, I realized that it is really FAR past it’s date (you know I have a problem with that!) but it was still good .

I marinated it in Italian dressing, sprinkled it with ground black pepper and then sautéed it in a skillet coated with cooking spray.

I snagged a piece to taste first and it was great!

I added a little more of the dressing, some Locatelli cheese and I’M IN LOVE!!  I had never prepared tofu at home before. I would buy it and it would stay in the fridge until it became a science experiment!  I’d gotten some that was already flavored and used it for wraps but this is the first time I’ve cooked with it.  I like it so much that this morning I sliced some more and put it in to marinate again.  I guess I need to get myself one of those tofu presses now.  Oh, goody…another kitchen gadget!! ;-)

Ralph had to go to a funeral today, so I’m on my own until it’s time to work on the Rummage sale this afternoon.  Lots of things I can do.  I need to use my time wisely!

Where Did Thursday Go?

I woke up Thursday not wanting to do any of the things I needed to do.  I didn’t feel like doing my meditation practice in the morning so I skipped it. (I did make it up in the evening though) I did my 30 minutes on the exercise bike. 

Then I was off to grocery shopping.  I wanted to make a recipe that Ele had made on Sunday and I needed to pick up a few things.  I stopped at work to see her to be sure I got what I needed.  When I came out of her office it was Snowing!  I couldn’t believe it.  Fortunately, it didn’t last long. I just stayed cold and damp all day.  (Remind me again why I’m still in New Jersey… :-(  )

At the store, I stocked up on Oat Bran which I had been missing terribly since I finished my supply earlier in the week.

…and since the box had a yummy looking muffin recipe on it, I splurged on a new muffin/cupcake tin!

I’m looking forward to giving the muffins a try…yes…she CAN cook from a recipe!  I’ll prove it to you! ;-)

I had picked up some things for my friend Gail and stopped by to see how her Mom was doing.  I spent most of the afternoon there.

I hadn’t eaten any lunch and by the time I came home I was starving, but didn’t feel like cooking.  I decided it would be a salad for me.

I popped 2 Morningstar Farms Spicy Black Bean Burgers into the toaster oven.  That always seems to be the easiest way for me to cook them. 

While they cooked I chopped up Romaine and grape tomatoes

Added sunflower seeds and  1 cup of my home-made black beans ( I was going for serious protein here!)  I also added lots of Mrs. Dash’s Fiesta Lime seasoning (yum!) and tossed things around.

Added the chopped up burgers and WW cheddar cheese…can you say PROTEIN?!?!

Even though I had the Newman’s Own Light Lime in the photo, I changed my mind at the last minute.  I decided that plain balsamic vinegar would taste better with it.  I was right.  It was a truly delicious salad.  It was very filling and just what I needed.  I like when dinner is filling…it gives me a much better chance to stay on track as far as night-time snacking is concerned.

Interesting thing about the Newman’s Own.  After I had decided not to use it, I got a call from my friend, Pat.  She had bought the Light Lime on my recommendation.  She called to tell me that she had a bottle to give me because she HATED it!  I felt bad that she’d spent the money on it, then didn’t like it.

I guess it just proves the point that different people like different things.  I usually say I like anything with lime.  Two years ago I was in Florida with Gail and Alice.  We were out at a restaurant and I had been hearing about one of the beers, I think Miller Lite that now had a variety with lime.  I had been waiting to try it.  Gail looked at me like I was crazy when I ordered it while everyone else had their pitcher of Coor’s Lite.  I drank about half the bottle and asked for a glass from the pitcher.  Gail gave me her best “I told you so” look and then laughed at me.  I guess I can’t just think that anything with lime will be good.  Hey, it sounds like we’re getting back to the green theme again!!

Now it’s Friday.  It’s one of those days when woke up at 3am and couldn’t go back to sleep.  I’ve been using my time well though.  Let’s see if I can keep it up for the rest of the day!  Happy Friday!

Saturdays are for Treats (and Protein)

After my hard-won success at Weight Watchers yesterday, I felt like going out to lunch.  I thought about if for a long time before I suggested it to Ralph.  I wanted to go somewhere we hadn’t gone in a while, someplace I liked.  I suggested Moe’s Southwest Grill.

It’s one of my favorite places and I know they have lots of choices for me.  The only problem was the Chips…remember the chips I gave up for Lent?  So although I came up with the idea of Moe’s quickly, I thought long about the chips…fresh made chips…CHOICES of salsa.  Oh my, what to do?  Since I had settled in my mind on the Tofu Rice Bowl, I figured I was ok because they don’t serve you chips with that and I didn’t have to ask for “no chips” and have to have a long discussion about that in front of the staff.

I decided I would just suggest Moe’s and go from there.  Well as I was researching on-line what the nutritional value would be so that I could calculate the points, (I knew it would be a lot!) and after mentioning to Ralph that I wouldn’t be eating any chips because…blah, blah, blah…he decides to bring up the “fish” issue again.  Why can’t you eat fish, fish don’t have brains (but part of the argument was that they’re “brain food.”  Go figure that one!!)  “Because I don’t want to”  wasn’t taken as a valid reason, the fact that I get plenty of protein from other sources was also not a valid reason.  Fortunately, after a few minutes the discussion was dropped. (whew! she says wiping her forehead with her hand!)

So back to my research.  Moe’s website has to be one of the best ever to look up the nutritional value of your food! Not only do they give you the nutritional label, but they allow you to adjust any personalizations you make to your choice to see how it will change the value.  It’s incredible, especially for a WW member! :-)

So off we went to Moes!!

I ordered the Tofu Rice Bowl.

I was so excited a few months back when I realized they had added this to the menu.  I actually heard a TV commercial and I was amazed that they would mention Tofu in a commercial.  But I can tell you that it got me into the restaurant! ;-)

Still having trouble with all of the “why are you taking pictures of your food?” questions. 

I would have taken more photos of the inside which is very colorful and a lot of fun.  But I got my food and the exterior, so you get the feel.

My rice bowl was delicious. It did cost me 19 points, but I had some of my weekly points left so I was ok. The good news?   Thanks to Moe’s website, I know that in that little bowl of deliciousness I got 32 grams of protein!  Of course being the non confrontational person that I am, I didn’t mention it.  I kept it to myself but I’m keeping in my arsenal of ammunition in case I have to fight the battle again. 

My meditation practice last night went very well.  I felt very focused.  I like doing it in the evening and perhaps that’s because by that time in the day, I need something to calm and focus me.  I am going to try to do it morning and night.  There’s no reason why I won’t be able to do that. 

So I sprang ahead this morning, I’m up early and I have projects.  Spring ahead means that Spring is that much closer.  Have a beautiful Sunday!

Oh Happy Day!

As you can tell from the title of this post, I’ve had a good morning so far.  After spending a week of trying very hard to follow my Weight Watchers program and staying on track with my points, I saw the light at the end of the tunnel this morning and no it wasn’t a train! ;-) 

I lost 2 and 3/4 pounds today!!  I felt as if I had done well, but that was more than I expected and of course I was thrilled! :-)

I think this week was actually a good learning experience for me.  That may sound a little odd considering I have been a WW member for 23 years, but I am serious about it.  I’ve been talking about the fact that one of the things I hope to achieve with my meditation practice is focus.  I was not feeling as if I was bringing things into focus.  Without realizing it, I think the first step in achieving it has been with Weight Watchers. 

Even after all of this experience with WW, I spend many days, just poking around at it; not taking seriously what I’m doing.  I feel that this week I turned a corner there.  I spent a lot of time, figuring what I was going to eat and taking the time to judge what would be the best choice for me. 

So many times, I eat the same things because I either like them or they’re easy or I know how to count them.  This week it seems to me I took more time to actually determine which would be the best choice.  I did get stuck a bit with my new favorite breakfast, oat bran.  I had it every morning this week.  But I realized I need to change it up. 

I think the fact that I’m now tracking the protein I get is making a difference.  Because of that I’m looking at food differently.  I remember learning when I first started WW that it was important that you have protein at breakfast, it satisfies you and sets your body up to burn calories efficiently all day. 

This was my breakfast this morning…

Chobani Fat Free Lemon yogurt and Fiber One Original Cereal.  I’ve often mixed the Fiber One with yogurt before, but I sort of got away from it.  I love Chobani plain but I only tried the flavored ones this week.  I had a peach one earlier in the week.  Peach is one of my favorites.  But Lemon is my real fave.  This was so tasty and I’m excited because I got it on sale and I have a lot of it in the fridge.  I got some of the plain also which is good to make up my own flavors.  I’ll have to get creative and share my new ideas.

This is also very high in protein.  The Fiber One has 2 grams of protein and the Chobani has 15!  So that’s 17 grams of fiber for breakfast!  You can’t argue with that.

Because of going to my WW meeting this morning, I didn’t get to do my meditation practice, but I will do it this evening.  In fact, last week when I did it in the evening, I really enjoyed it.  I wish I could work out my time to do my practice both morning and evening.  I just have to figure out a way.  I think I proved this week that I can figure out a challenge and end with a positive outcome.  I can do it! :-)  So can you.  Have a great Saturday!
