I’m getting my act together, here in New Mexico which isn’t easy with unpacking (still not done), gettng some sleep (finally slept well last night) and just taking time to enjoy the beauty around me. But it’s Wednesday, and nothing else matters but…What I Ate Wednesday! By now you should all know that means the fun party started by Jenn over at Peas & Crayons. Looks like we have a new theme for August (love the themes, Jenn!) and I know I can’t give you any tips on summer staples (especially since I haven’t read the details yet…this time difference is a little freaky…feel like I’m behind everybody else!) I think I’ll be catching up with that next week!
Eating on the road is tricky and although I had all good intentions of planning and making healthy snacks I pretty much ate bag of almonds through 7 states. That was in the car. Sometimes at our stops, I didn’t make the best choices, but as I look back, it could have been worse! As soon as I can go shopping and get some of my “summer staples” in the house, I’ll be just fine.
Because of my shame at most of my food choices, I don’t have much photo evidence. That won’t keep me from participating!
After driving all night, we stopped at a Cracker Barrel in West Virginia. I was expecting their usual fare, but I was happy to find this. Yogurt, fruit and granola! I could have had meat, but of course declined and had scramled eggs. It was supposed to come with a granola bar but because it was 6am and they had just opened, they weren’t ready. I had to suffer through eating 2 biscuits with apple butter… It was all very good. So glad to see something like this on their menu and I hope it becomes a staple.
On our first day in New Mexico, Ralph and I were both exhausted, we needed food and we decided on Taco Bell. We both love it but also, it’s practically within walking distance of the house!
I’ve seen a lot of commercials lately about their new salads. I didn’t realize that there was a veggie version because they only seem to advertise the one with chicken. This was quite tasty. Flavored rice, lettuce, black beans and roasted corn salsa. There was also a tangy green dressing and a nice dollop of guacamole. I liked it a lot and it makes me want to recreate it myself. I have NO idea how to count it for Weight Watchers. I need to go to the website. I want to know so I can have this again!
That’s What I Ate Wednesday for Me! Not much food, but there will be more to come, believe me! I’m still trying to get settled, adjust to the time difference and just generally come back to life after the road trip.
