Ralph and I took a trip to BJ’s Wholesale Club today to pick up a few things. We were out of Splenda and it is so much less expensive there, especially the BJ’s brand. I also picked up some popcorn, which helps me stay on track and toothpaste. I am NOT the one who bought the cherry turnovers…I plead the fifth on who did!
We had lunch at a local diner. Good spinach salad, but I just wonder why some people cannot act professionally. Waitresses were shouting back and forth to each other, personal comments that the customers should not have to hear. The worst thing is that no one in charge made an attempt to stop them. Very irritating. I’ll get off of my soapbox before I hurt myself!
After spending several hours at Gail’s, when I got home I wasn’t really hungry yet so I waited a while. I had not yet tried the edamame burger from The Wishing Well that I had gotten at Natural Harvest Market. I decided to give it a try.
It was HUGE!! I had been advised to cut it in half and use bread crumbs, so that’s what I did. I coated a skillet with cooking spray and set it to cooking. However, it’s very soft and it generally fell apart. I probably needed a larger skillet and more bread crumbs. It might have also worked better if I cut it in 4 and then breaded. Next time I’ll know.
I served it with red bell pepper strips and baby carrots. I dipped them in the sauce that came with the burger. Sort of a sour cream, pickle combo. The verdict. DELICIOUS!! I don’t usually just cut up veggies to eat along with my other food. I may start to do that. I really enjoyed it and the overall meal was very filling. I didn’t eat another thing except some mandarin oranges. I think eating late helped too. Maybe I should consider eating my dinner a little later. Keeps me from snacking.
An unusual, but beautiful sunset last night. It almost looked like a sunrise. Thought I’d share it with you.
Now it’s Wednesday. Not sure what the day will hold. I have fruit to cut up. Can’t wait to see if I can conquer the mango. We’ll see it if conquers me!
